2 carrots
medium piece ginger
3 sticks green onion
10 dried shiitakes

1 tbsp salt
LIGHT BROTH DIRECTIONS:
1. Peel and chop the daikon into medium sized cubes, roughly chop the carrots, slice the ginger, and roughly chop the green onions
2. Add all of the light broth ingredients to a large stockpot and bring to a boil. Then, simmer on medium for about 1hr

1 tsp cinnamon
1 tsp cane sugar
4 pieces garlic
medium piece ginger
3 sticks green onion
2 cups avocado oil
1/4 cup doubanjiang
1/4 cup black bean paste
SPICY BROTH DIRECTIONS:

7. When ready to use, simply dissolve about 1/3 cup of this spicy broth base to 4-5 cups of the light broth and bring to a boil. Throw some extra whole dried chilies in there for good measure!

Oh wow! What kind words and how nice of you 🤗 Keep well and happy cooking
This goes double for me, a 41- year active, 11- year-retired teacher. ❤
Triple, lol!
I’ve been fostering a Chinese boy for almost two years and this is our favourite thing to go eat, we are going to invest in a home set too now I see how easy everything is!
How very kind and unselfish of you ! 💙🥰
@@handlenot030 Yes there are several. Kind, empathetic, selfless, humane, compassionate, caring, and considerate to name a few. People that foster or adopt are all of these in my opinion. 🥰
It can be as simple as an induction cooker and a suitable pot! Highly recommend home hot pot
Aww, I love hearing this! I'm so glad you are all bonding! 🥰
We just recently purchased a dual hot pot so we can make it at home. 😋 I luckily already had a burner, so I just needed the two sided pot. I've started collecting the shelf stable ingredients I need, and then we're going to 99Ranch (Asian market) this weekend to buy the fresh ingredients. I promised my spouse I'd make it as a holiday meal, because he loves it so much, and we always have had to wait until we had time to go out to have it. 😂
It's a great meal to bond with family and friends 🥰😋💜
I love the flexibility of your recipes that allows me to make the dish my own, blending your traditions with mine!!
Glad you like them! Enjoy! 🙌🏻
I wonder who can hate you or if you ever can have a hater…😊
you are incredibly sweet and all your recipes are absolutely amazing and your recipes also have lots of variety so they’re suitable for all tastes!
I appreciate all your fantastic videos and your lots of amazing ideas… and also your gentle voice and your positive energy really complements your videos as a cherry on top💜🙏🏻😊
"Whenever we cook together, it's a special occasion." That was so sweet.
🙌🏻
Your attention to detail is impressive. It's clear you take pride in your work as a chef. 🥰👌👌
I'm not even vegan but I love this channel....... And the food ....but mostly the instructor who shows you can do anything 😊👍👍👍👍🥇
Love that! Glad to hear you are here and enjoying 🙌🏻👨🏻🍳
What an incredible video! As you said, the secret ingredient to Hot pot is in the time spent with friends and family and I even felt that was present just in watching this video. Thank you for sharing, Wil!!
That’s wonderful 🤗 Happy to be cooking together
I absolutely love his food and the way he presents it makes my mouth water everytime!
Glad to hear you are enjoying 🙌🏻
Amazing production and content. Great recipes with a masterful delivery, easy to understand and follow, beautiful music, beautiful concept… just beautiful.
Very kind of you and glad you are enjoying 🙌🏻
Happy New Year.
You have the best cookery show online.
Wishing you and all your viewers a wonderful 2024.
Same to you 🙌🏻
I have to say, I LOVE this channel. You have completely changed how I vew food and what I want to eat. Thank you so much x
Oh wow! Happy you are enjoying and glad you are here 🙌🏻
Food is always such an adventure on this channel, Wil! This does look like the most amazing recipe to have with friends and family. I must find an occasion to gather them and try it. The spicy side looks just a little terrifyingly hot to me (I have what Nisha on Rainbow Plant Life calls "babymouth"!), but I bet it's delicious too.
It’ll be special for sure and all good sticking to the light broth 😁
At around 10:12 into this video, I love what Wil says about the most important recipe of the year😔...it is a very thoughtful and very a meaningful comment. And of course this ended up being another great recipe too.
I am binge watching his videos in my efforts to get ready for Chinese New Year. And because Wil has so many "Perfect" recipes, planning the foods that I'll include has been difficult but definitely fun too.
❤❤❤
Thanks So Much For Sharing!
My Taste Buds Dance With Joy!
The most comprehensive video on veg hot pot i've watched. Thanks Wil!❤❤
This is such an inspiring channel. Thank you for all the great ideas! 😎👍🏽
Wowza! 😲 You are amazing and very kind! It is my absolute pleasure knowing that we are cooking together and happy to share more 👨🏻🍳 Cheers!
Love from France, your channel is amazing and made my life so much more flavourful!
Okay, this is far more fabulous than I expected. Thank you for sharing the magic!
You are so welcome!
I adore all tour vidéos. Thanks . Yummy hot pot
I can’t wait to try it!! Thank you so much for the vegan hotpot base recipe!
You are so welcome! Enjoy 🙌🏻
Thanks for introducing me to something brand new. I know the term “hotpot” but I had never seen one or knew what it was exactly. This looks wonderful just like all the videos you’ve made.
You are so welcome!
😂😂😂😂 I absolutely love the msg to the haters... Positively hilarious 😂🎉🎉. I only use olive oil, avocado oil, garlic oil and sometimes, sesame seed oil. Haters, go take a long slide on a banana skin.
I've been wanting to try Hot Pot for quite a while now, thank you for making it seem much less daunting!
It definitely is one of those recipes that can be as simple or involved as you wish 🙌🏻 Happy hot pot
Best vegan channel for everything asian food and more !
I am so curious to try hot pot! I went to a Chinese restaurant here in Italy where they serve hot pot, but they didn't have any vegan option 😞 I will have to cook my own, but thanks to you now I feel definitely more confident in doing so!
I was waiting for a vegan hot pot recipe in your style🎉 Just in time to enjoy dinner at home with friends during Christmas holidays.
Happy holidays and enjoy! 🙌🏻
We have hot pot all the time but not the spicy version. Just love that I don't have to cook but just prepare the ingredients to be cooked by the individual.
The "kiss my...Totoro" edit was brilliant! I love hot pot! Must try this.
😁
What a wonderful idea for the holidays with dear friends. This will definitely put a smile on everyone's faces.
Thank you!
Absolutely ☺️🙌🏻
Did I see a Totoro for a second or am I losing it? Haters can kiss your totoro?? hahaha
You are a cooking master and always make me want to eat your food!
I love that you talked about your childhood too and gave us a glimpse of something special to you.
Little Easter egg 🤭
Another incredible, atmospheric video! Everything looks so delicious 💙💙💙
I want to come to your house for dinner!
🙌🏻🙌🏻🙌🏻
Sadly I gave up mapo tofu years ago when I learned of my gluten allergy. I can't find a gluten free doubanjiang out there. I have found fermented black beans at least.
So I imagine the hotpot will taste different without. I have never had a redtaraunt hotpot with dipping sauces. They always made a flavorful broth and never offered sauces. I've had difficulty trying to recreate the spicy broth at home since giving up red meat and beef broth, but I still try sometimes.
Beautiful beautiful BEAUTIFUL! I cannot wait to enjoy cooking HotPot with my loved ones and create the connection and sense of community that this tradition allows us to experience. Thank you for sharing this with us! Always love the stellar way you present each recipe, with so much understated enthusiasm and joy. You are a great treasure.
Ha!! Yes those haters can...😂
That gave me a good chuckle. What an interesting dish, I would definitely like to try this!
😁🙌🏻
I love the music!! So beautiful! Can you share who that is?
Hiya 🙋🏻♂️ All music is licensed from Soundstripe
Wow I’ve never tried a hot pot meal, looks absolutely yummy ❤
Such a good one to try out 🙌🏻
Oh man, how did you know that I've been craving some hot pot this winter? I have got to try this recipe!
Hope you enjoy 🙌🏻
I don’t recall how I found you a few years back. But it was so thrilling because it’s still so hard to find shows/chefs that cook only vegetarian Asian cuisine! Easy to find other cuisines but not the ones shown by you!! I hoe to try a few dishes with my family this holiday season. We plan to remake the hot chili oil of course. Your clear, no bs teaching with a calm voice, no chit chat is very appealing to me. Continue to grow and prosper in all you do. Wishing you the best of health happiness and success ahead! PS: ex Canadian in the USA with lots of family still in Toronto. Would be a dream come true to meet you in person one day and take an in-person class 😮
Oh wow! Those are such kind words and so happy to know that we are cooking together 🙌🏻👨🏻🍳 Keep well
Stopped vid at the mention of “a secret ingredient” to take a guess… is it chili oil? 😂😅
Stopped again to say the background music is absolutely beautiful! 🎶🥰
Nope the secret ingredient is wayyyyyy better ! 🥰
This is so amazing! Don´t know if i´ll cook this any time. But lookin´ & gettin´ inspired is more than enough!
Ppl love mala hotpot anywhere.
Need szechuan pepper & chilli oil. I replace kashmiri dried chilli for less spicy. Never like numbing so will always tell store just 1 chilli mark.
I am thankful to be here watching another video of yours today. It has been a long while, but I am grateful to see another amazing dish / dishes you are preparing. Looks healthy and delicious as usual. Thanks for all you do! Much love throughout the Holiday Season.
Glad you are here 🙌🏻 Keep well and stay safe
Love this guy, he looks genuine. I enjoy his great recipes; I can hear him talk all day. Pleasant tone of voice
He is genuine. He’s transformed our family dining with his never fail delectable recipes.
Good for you to tell the Haters to go away. I, myself, also occasionally digress from the cultural norm when preparing a delicious meal. I pretty much copied your recipe, and when it was ready to enjoy, added my favorite topping. Mix ⅔ cup of catsup with ⅔ cup of Grey Poupon mustard, and a tsp of powdered alum. Cook on high until a black ring of carbon appears at the edges, and you're done. Pour generously over the plated hot pot contents, and enjoy.
I LOVE your recipes, sense of style, your skills and your calm demeanor!!!
Haha! Love the “haters” comment! You are just adorable!💕Many blessings
Have tried many of your recipes. Most of them we really love. Looking forward to cooking with you in 2024. Happy New Year!
Our daughter in law introduced us to hot pot and I have shared your recipes with my son and their family. What a great gift idea to make home made broths! They have an electric hot pot for the table.
Wonderful! And yes, such a treat to gift ☺️
Wil, thank you so much for these fantastic videos. Everything that matters, you have mastered: the audio is clear with adequate volume, the video is gorgeous, clear, sharp and simple, the explanations are beautifully expressed and easy to follow, the music is subtle and beautiful, your voice and demeanor are so pleasant. I have all three cookbooks, but it is so wonderful and useful to see the recipes brought to life under your competent hand. I am so grateful.
Oh wow! What kind words and so happy to be cooking together. Keep well and catch you in the next episode 🙌🏻
Wow such an amazing recipe with some of my favorite ingredients and spices ❤mushrooms, chili peppers 🌶️, veggies and the broth- perfectly harmonious combination!!! Thanks for sharing and explaining. 👏 Greetings from Los Angeles 🎉
My pleasure and happy cooking 🙌🏻
Well, it still better than ever as always and please don't ever stop cooking. 😊
Your hot pot looks so heart warming! ✨
My fave veggie has to be the enoki mushrooms
Oooo! Good one 👌🏻
It looks like an amazing way to share a meal, Wil! I might need to make that spicy soup base! =]
Thank you. You have the most delicious recipes ❤. Thank you for sharing with us ❤❤
My pleasure 😊
Wow! Just Wow! What an amazing video, amazing recipe, and the music....totally amazing! I've watched a couple hot pot videos but loved your version. I look forward to prepping this one day. I also love the way you smash garlic with your bare hands. I haven't been able to do it like you, it hurts! Lol! Thanks for sharing this amazing recipe, Will!
Thanks for sharing your recipes, cooking skills, and humor with us, Wil!😊
My pleasure 🤗
Thank you for another tasty receipe. I have one of your cook books and haven't found a single meal in it I didn't like. I'm looking forward to every new video you present. They are all filmed very beautifully.
That’s wonderful to hear 🙌🏻😎 Happy cooking and keep well!
I’ve been wanting to try hot pot for ages, this is definitely the push I needed! Great work as always Wil :)
Hope you enjoy it! 🙌🏻
Oh wow - this is just another level. You seem to be more relaxed in this video and I loved the little bleep moment ! I have your bowls but I REALLY want those small serving pots you have, This would be an awesome dinner party. Can you add these to your merch shop please or let me know where to buy them? We are building a house currently and when it is done I am going to be going all in on this cooking as it gives me joy following your recipes. So thank you. In the meantime I think I need a signed book or two :)
Hiya 🙋🏻♂️ So glad to hear you are enjoying the bowls 🤗 and we will keep this in mind for future products
Oh my this looks sooo good ! Sinfully yummy 😋
Simply beautiful to watch. Thank you for sharing this with us.
🙌🏻🙌🏻🙌🏻
Your delicious recipes warm the hearts of our whole family! Thank you!
🤗
I had never heard of hot pot before this a really beautiful interpretation of it thank you for making it for us
Your timing is perfect Will! I have an antique Mongolian Fire Pot that's been in storage for a long time. I'm about to move and that baby is coming out to play. It's old enough so the cooking source is wood or charcoal. I have to learn how to use it but it's going to be fun. Thank you for this. This looks fantastic! ❤❤❤
Oh wow! That will be a treat for sure 👌🏻
I had never heard of this dish. It looks absolutely wonderful! Thank you Will.
LOL who knew that you would mention Totoro a great movie and Studio Ghilbi rules. Excuse my lack of being able to spell correctly. I hope to try hot pot some day soon. Thanks for walking us through the recipe.
Thank you for sharing your Chinese Hot Pot with us your viewers ❤.....
It looks absolutely 💯 👌 delicious 👌 😋
My pleasure 😊
I'm a bit confused. The spicy soup base is for about 4 hot pots. Then you mentioned that it can be stored for 2-3 weeks. Do you eat hot pot 2 times a week or did I misunderstand something?😅 If planning to only make one hot pot, it probably makes sense to make a quarter of the soup base, right? Anyway, love your videos and recipes! They make it much easier to be vegan :)
In a more serious note, sorry about the previous one. This Umami Spicy dish is Hot and deserves all the Glory and all because of you. Champagne toast to you Chef. Peep Fan. ❤😊
Cheers and enjoy! 🙌🏻
Dear Wil - you are so cool. I love your spiky hair (and, of course, your food).
😁 glad to hear you are enjoying
I've done hotpot at home with family and friends at least 40 times, but we've always just used some store-bought broth mixture. You've inspired me to make the broth from scratch the next time (which should be in a few weeks).
Thanks as always for your amazing and inspiring videos! I'm so thrilled to see the success you've had so far!
My pleasure and looking forward to hearing how it goes 🙌🏻
Years ago, my first few years after uni and into work, number of us co-workers got together to do fondue style potluck dinners; cheese, oil and chocolate. I introduced the hot pot, it was well received. So much fun and delicious food.
So sumptuous!!!!!must try !!! Black bean paste … not available here !!! Hmmm how to make bean paste???!!!
lol no haters here! another amazing meal that I'm excited to prep for January to bring together friends from all backgrounds. Thanks for this gorgeous video! 😍
Happy cooking and enjoy! 🙌🏻
I’ve had Korean hot pot in the past. I will def look up this recipe again before my next shopping trip to make sure I have all the wonderful ingredients to make those fantastic broths
Applauding! I love this appropriate celebration of vegetables herbal fusions! Wil! You brought the crux of this menu to a sacred posture, FAMILY GATHERING to eat together! I pray families will restructure daily breaking of bread together! Such a missing quality in 2024! A masterpiece to serve with confidence! Galore!🍽️
Oh man, this makes me want to buy a dual hot pot and have a hot pot community dinner. Thank you Wil. Perfect for a holiday video.
That sounds splendid! 🙌🏻
This looks delicious but it's too involved for me to make for solo dining. I guess I like eating more than cooking. 🙂
Uauuu!!!!.. voces não tem problemas com tantas pimentas e condimentos?..
Happy New Year 🎆🎇🧨
Greetings from original from South Vietnam but now USA 🇺🇸 ❤❤❤😊
Wil, amazing and so doable. Going to make this Wednesday to surprise the fam 🤩 Busy Holiday season, but fun. Wishing you and your family the most wonderful Holidays and a most prosperous New Year!
You as well and enjoy! What a treat they are in for 🙌🏻😎

Being from Hawai'i, I know old school Japanese, S Chinese, and Luzon Philippine cooking. This is different. Thank you!
I had hotpot in a huton in Beijing. We share a fondue and racklette with family….similar dining together experience. But I would LOVE to have a genuine hotpot! Thank you. Love your videos.
Perfect For Cold Winter Season !! Should Try It , Never Tried It. Looks Good.
I agree that eating together is one of the best things in life. And hot pot definitely works for that. I will be making this for a family get together in mid January. It will be a lot of fun to introduce them to hot pot. 😊
I AM LOVE YEUNG MAN COOKING!!!
My absolute favorite meal! Thank you for sharing this! Can't wait to find a divided pot & make my own special meal.

@@YEUNGMANCOOKING yup
What blender do you use?
Hiya 🙋🏻♂️ It is the a3500 series from Vitamix - a real treat to use in the kitchen
I love your cooking!
However, so many of your spices I can’t eat.
I will check out some of your recipes and see if I can improvise around them. ❤
This recipe is a dream! Thank you!
Hi. This looks great but looks like additional info is needed. Does the recipe in your cookbook go into additional info about slicing mushrooms etc? Also, doesn't the dried tofu need to be soaked ahead of time? Mine always take a lo g time to soften/cook. And lastly, while i like the idea of a spicy broth, i can't handle much heat. Suggestions for modulating spiciness? Tha ks a bunch.
