Could be your ingredients the quality of it. A lot of plantain flour in the store gets extremely dark when cooked. So you will have to use much much less
I like how you always give 3 ways to make things. Makes you stand out from the crowd. I like how you used your wisk. Smoothness is key for this dish. You did good. Plantain flour not tried that yet or mashed potatoe. The shape is perfect.
