Lovely little recipe Rachel. I make it too but slightly differently so I'm going to give yours a try. Adding seaweed is also good for replacing fish sauce. I just rehydrate a few pieces and buzz it up with everything.

I am going to make this for sure, but slightly worried about the jar sterilisation, no dishwasher and ancient oven- maybe a container you can sterilise with boiling water, without your jar breaking. Such jars surely exist!

it seems like kimchi ferments differently to sauerkraut :o I always hear that you should avoid a lot of air in your jar and cover all the veg with the brine

Ive been making kimchi for like 8 years and istill love doing it i make it twice a year. Really suggest putting gloves or putting a plastic fruit/veg bag on your hand (put an elastic on it around your wrist) to mix if you aren't used to manipulating chili peppers. As long as the mix is salty at the end you should be fine. Its supposed to be salty. I only ferment 6-8 hours and pop it in the fridge.
Love this! As a substitute for fish sauce (to make it veggie or vegan) you can use Oyster Mushroom Sauce :) I'm almost out of kimchi so will be making more soon!
Can i open the lid,just to let the gas escape,or am i not suppose to close the lid completely? ... I mean,when i close the lid before i put it in the fridge. Can i use curry paste instead of gochugaru. I don't get it where i live
If l can't get the Korean pepper flakes, is it OK to use other red pepper flakes, is the only reason it will be less hot which l don't mind, ? Thank you, l love your recipes xxx

Someone said mushroom oyster sauce but you can also try to look for vegan fish sauce. That’s what she’s substituting for in traditional kimchi
