2 large eggplants
2 cloves of garlic, minced
2 fl oz/60 ml olive oil
1 lemon, juice
2 tbsp red wine vinegar
1/4 red onion, finely diced
½ cup fresh parsley, finely chopped
Salt and pepper (to taste)
