Hi! was your generic chantilly cream stable at room temp? I struggle to make a whipped cream frosting that doesn't get too melty, is smooth and stays white :( ive tried gelatin as a stabilizer and that seems to work the best.
Does your cake flour has raising agent in it? (baking powder or baking soda)? I made this cake twice, followed every step but mine does not raise as much as here in the video 😂

Can you use cream cheese if you don't have mascarpone? If yes would it taste close to the same as this. I really want to make this, but I want it to be as tasty as I am sure this is.
The taste will be different from the cream made with mascarpone cheese, but I think the cream made with cream cheese would also be delicious~ If you want to make milk-flavored cream, use only fresh cream~

No the reason is the eggs act as a rising agent in the cake so you have to whip them with the sugar only and then fold the other ingredients in. If you made the cake with baking powder and or soda you could do it all together.
The sugar syrup makes the cake more moist so it's not dry when you eat it, you can also use something different like tea or lemon juice to adjust the cake to your taste (✿^‿^)
