    시트는 얇고 딸기가 많아서 한입 먹을 때마다 딸기 맛이 풍성하게 느껴지는 것 같아요.
    한조각이 묵직~해서 한조각만 먹어도 기분도 뱃속도 든든하게 채워지는 느낌이랍니다^^

    [재료 Ingredients]
    달걀 4개
    설탕 100g
    바닐라익스트랙 3g
    무염버터 30g
    우유 40g
    빨강 식용색소
    박력분 110g
    차가운 크림치즈 100g
    설탕 20g
    연유 60g
    차가운 생크림 400g
    딸기
    차가운 크림치즈 50g
    설탕 15g
    연유 30g
    차가운 생크림 200g
    빨강 식용색소
    4 Eggs
    100g Sugar
    3g Vanilla extract
    30g Unsalted butter
    40g Milk
    Red food coloring
    110g Cake flour
    100g Cold cream cheese
    20g Sugar
    60g Condensed milk
    400g Cold whipping cream
    Strawberry
    50g Cold cream cheese
    15g Sugar
    30g Condensed milk
    200g Cold whipping cream
    Red food coloring
    [만드는 과정]
    케이크 시트
    1. 끓인 물이 담긴 냄비 위에 달걀이 들어 있는 볼을 올리고 설탕과 바닐라 익스트랙을 넣는다.
    2. 계속 저으면서 달걀물이 살짝 투명해질 때까지 온도를 올린다.(약 40도 정도)
    3. 달걀물을 냄비에서 내리고 버터와 우유가 들어 있는 볼을 올려 중탕으로 온도를 올린다.(약 50~60도 정도)
    4. 달걀물을 고속으로 휘핑해 미세하고 고운 거품 상태로 만든다.
    5. 빨간 색소를 조금 넣고 저속에서 1~2분 정도 기공을 정리한다.
    6. 밀가루를 체에 쳐서 넣는다.
    7. 주걱으로 날가루가 보이지 않을 때까지 섞는다.
    8. 약간의 반죽을 덜어 버터와 우유가 들어 있는 볼에 넣는다.
    9. 골고루 섞은 다음 본 반죽에 넣고 섞는다.
    10. 오븐 팬에 붓고 175도 오븐에서 35분 정도 굽는다.
    11. 식힌 다음 밑면을 잘라내고 1cm 두께로 4장을 슬라이스한다.
    크림치즈 크림
    12. 차가운 상태의 크림치즈에 설탕과 연유를 넣는다.
    13. 휘핑기로 뭉침 없이 골고루 휘핑한다.
    14. 차가운 상태의 생크림을 넣고 단단하게 휘핑한다.
    15. 케이크 시트를 돌림판에 놓고 크림을 얇게 펴 바른다.
    16. 반으로 자른 딸기를 듬뿍 올린다.
    17. 크림을 올려 평평하게 하고 반복해서 쌓는다.
    18. 전체적으로 발라 매끈하게 하고 냉장실에 넣어 둔다.
    핑크 크림치즈 크림
    19. 크림치즈에 설탕과 연유를 넣고 뭉침이 없도록 휘핑한다.
    20. 차가운 생크림을 넣고 휘핑한다.
    21. 빨간색 색소 한 방울을 넣고 단단하게 휘핑한다.
    22. 케이크에 전체적으로 발라 매끈하게 한다.
    23. 아랫부분에 크림을 짜 장식한다.(깍지-작은 별 깍지)
    24. 윗부분에 크림으로 장식하고 딸기를 올린다.(깍지 번호-869k)

    혹시 휘핑크림을 따로 두개를 만드는 이유는 뭔가용..? 꼭 두 개로 만들어야 하는건가용?

      한 번에 휘핑해 만들면 겉면 아이싱을 할 때 크림이 시간이 지나면서 부드럽고 매끄럽지 않아 아이싱을 하면 예쁘지 않더라구요~
      시트에 크림을 바르고 냉장실에 굳히기 때문에 크림을 너무 오래 두며 사용하기 어려운 것 같아 따로 휘핑해 사용했어요~

    흠, 식용색소 대신 천년초나 비트, 건딸기 가루같은 걸 조금 넣으면 이런 색깔이 안 날까요???

      색이 나긴 하지만 색소처럼 색을 내려면 양을 많이 넣어야 하는데 맛과 반죽 농도가 바뀔 수 있을 것 같아요~
