Born to Egg Step-By-Step Enchiladas on the Big green egg.

  • This recipe uses the Born to Egg family favorite Shredded Chicken to make delicious enchiladas. Rob takes you through the recipe step-by-step. So, grab and drink and get your grill started. Here's what you will need:
    2 LBS Boneless Chicken Breasts
    2 TBS Butter
    2 TBS Flour
    3 TBS Chili Powder
    1/2 tsp Garlic Powder
    1/2 tsp salt
    1/4 tsp Ground Cumin
    1/4 tsp Oregano
    Cilantro (For Garnish)
    Jalapeno Peppers (For Garnish)
    48 Ounces Chicken Stock
    2 Packets McCormick Taco Seasoning
    3-4 Cups Oil
    Yellow Corn Shells
    1 LB Shredded Cheese
    Born to Egg Enchilada Sauce
    Heat on low your dry spices (Chili Powder, Garlic Powder, Salt, Cumin, Oregano) until aromatic
    Remove from pan
    Now make a rue by putting butter in the pan, turn heat up to MED
    Whisk butter until mostly melted
    Add Flour and continue to stir
    Turn heat to LOW
    Return spices to pan
    Add 2 Cups Chicken Stock
    Stir to desired thickness
    Remove from heat, cover and set aside
    Born to Egg Shredded Chicken
    Heat stove to MED
    Add Oil
    Sear/Brown Chicken Both Sides
    Add 32 Ounces Chicken Stock
    Add Taco Seasoning
    Stir and Cover
    Cook on the Egg at 300 Degrees (indirect with platesetter legs up) for 90 minutes. At 45 minutes start to shred the chicken. Shred it completely at 90 minutes)
    Heat the grill up to 350 Degrees and cook down the juices (make sure to leave a little bit of juice)
    Shells
    Heat 1/2 inch oil in pan
    Fry each shell, both sides lightly
    Assembly
    Place shredded chicken in shell
    Roll and place in a buttered baking dish
    Pack the shells touching but loose
    Pour Enchilada sauce over shells
    Cover with Cheese
    Place back on the grill at 350 degrees for 20-30 minutes
    ENJOY

    This guy is hilarious. Does he sell the eggs because he seems to genuinely love to cook on/in it. You also get the feeling that he really has made enough enchiladas or pizzas or any of the other food enough times and configured his egg enough ways that he really makes me believe that the way he is doing it is the absolute best way of doing it. Also for second I thought his kids cut him off of his “bev” but glad he ended with a salute saloo salou gambei in his hand

    Looks great! What GF flour do you use. Ever make Jambalaya or Gumbo on the BGE? I find it is difficult to make a dark roux with GF flour.

      I use an all purpose gluten free flour yes I absolutely make jambalaya and gumbo on the Big Green Egg

    Enjoy the recipes, but the coarse language really detracts.
