If a steel plate is within spec warp-wise, deglazing it on a surface plate will usually improve (i.e. decrease) the warp measurement by at least 0.001". For example, if a glazed steel plate has a no-go warp measurement of 0.007", sanding the plate until the glaze is removed will generally improve the no-go warp measurement to 0.006" or less (possibly even 0.004").
My (speculative) point about the fiber clutch plates hardening over time/numerous heat cycles and losing some of their grip is to some extent analogous to a situation where a tire loses some of its grip over time due to miles-in-service, age, and exposure to the elements.

On a after market clutch kit it’s only 1 different friction plate and all the steal plates are the same do you think it will still work I’ve tried to find stock clutches but I can’t find any.
Yeah, it should work. Sounds like a cheaper version of the factory clutch. But, you should be able to get all the factory Honda parts you need from babbittsonline.com. Their phone number is (231) 737-4542. I am assuming you are in the US .... 😊
