  • Aloo Chicken Pulao
    Ingredients
    :1 cup basmati rice300 grams chicken (cut into pieces)2 medium potatoes (peeled and cubed)1 large onion (sliced)2 tomatoes (chopped)1 cup yogurt1 teaspoon ginger-garlic paste1 teaspoon cumin seeds2-3 green chilies (slit)1/2 teaspoon turmeric powder1 teaspoon red chili powder1 teaspoon garam masala powder1 bay leaf2-3 cloves1-inch cinnamon stick2-3 green cardamoms4 cups water or chicken stock4 tablespoons oil or gheeSalt to tasteFresh coriander leaves (chopped) for garnishInstructions:
    Preparation:
    Wash and soak the basmati rice for 30 minutes. Drain the water before cooking.Cooking Chicken and Potatoes: In a large pot, heat oil or ghee. Add cumin seeds, bay leaf, cloves, cinnamon stick, and green cardamoms. Sauté until fragrant.Onions and Tomatoes: Add sliced onions and sauté until golden brown. Add ginger-garlic paste and green chilies, and cook for another minute.Chicken and Spices: Add chicken pieces and cook until they turn white. Add potatoes, turmeric powder, red chili powder, and salt. Mix well and cook for a few minutes.Tomatoes and Yogurt: Add chopped tomatoes and cook until they soften. Stir in yogurt and cook until the oil separates.Rice and Water: Add the soaked and drained rice, and gently mix with the chicken and potato mixture. Pour in water or chicken stock and bring to a boil.Simmer: Reduce the heat to low, cover the pot, and let it simmer until the rice is cooked and the water is absorbed (about 15-20 minutes).Finish: Once cooked, sprinkle garam masala powder and garnish with chopped coriander leaves.Serve: Fluff the rice with a fork and serve hot with raita or salad.

    :1 cup channa dal (split Bengal gram)2 large potatoes (boiled and mashed)1 large onion (finely chopped)2 green chilies (finely chopped)1 tablespoon ginger-garlic paste1 teaspoon cumin seeds1 teaspoon coriander powder1 teaspoon garam masala powder1/2 teaspoon turmeric powder1 teaspoon red chili powderSalt to taste2 tablespoons chopped fresh coriander leaves1/2 cup breadcrumbsOil for shallow frying
    Instructions:
    Cooking Dal
    : Wash the channa dal thoroughly and soak it for at least 2 hours. Drain and cook in a pot with water until soft. Drain any excess water and mash the dal.Mixing Ingredients: In a mixing bowl, combine the mashed channa dal, boiled and mashed potatoes, chopped onion, green chilies, ginger-garlic paste, cumin seeds, coriander powder, garam masala powder, turmeric powder, red chili powder, salt, and fresh coriander leaves. Mix well.Forming Patties: Shape the mixture into small, flat patties. Coat each patty lightly with breadcrumbs.Shallow Frying: Heat oil in a pan over medium heat. Shallow fry the patties until golden brown and crispy on both sides.Serving: Remove the patties from the pan and drain on paper towels. Serve hot with mint chutney or ketchup
