But they double every few hours, so in a day you’re talking x1000, and 2 days x1000000, etc. American ground beef from a supermarket, may have been sitting many days, so the red center has millions of billions of bacteria with food and space to proliferate inside the ground meat.
Correct me if Im wrong, but from what I understand, this might not be the best idea since bacteria can form between the grounded beef. The only reason you can eat steak medium rare since the bacteria only forms on the outside.

With a standard steak, if you char the outside, you've killed the bacteria and you can cook the overall stake to rare. With ground beef, the bacteria is ground into the center of the burger. But your standard ground beef from the grocery store will not have been properly prepared before grinding.
