My shtick is I've used a humble 18-inch Weber Smokey Mountain smoker to win 100+ first places and 1st place USA in the Kansas City BBQ Society (KCBS) awards including best chicken, brisket, and sirloin; and I've won over 30 Grand Championships. I've personally taught 250+ classes and trained 4,000+ pitmasters in small hands-on dozen student classes in the US, Sydney, Perth, London, Kuala Lumpur, Ireland, Germany, Mexico, Canada, and Hawaii.
    I get many questions weekly about how to grill and barbecue.       Thanks Jim. I'm doing a V2 of my rubs as comp teams have been buying my special blends which have MSG while the regular ones don't contain MSG. V2 will have the MSG punch without MSG as I engineered them with natural powerful umami analogs of MSG such as Koji, Shiitake, Kombu, Mirepoix, Red Cabbage. They will be released soon.

    Soo Sifu: Wishing you a great “Smoking” weekend! Thank you for taking us to Vegas for the product demonstration, lesson to roast a whole hog and how to build a cinder-block roaster! Your roasted whole hog looked great and must have beat some of the ones I have seen in Chinatown.     Grew up with whole hog roasts, but those were usually 240 pound live hogs, 175pounds on the grill, completely different . Interesting to such a small one on the grill.

      This is a 4 X 3 cinder block for a 50 lb. For a 200 lb, I reckon we need a 6 X 4 pit.

      Measure out a 5' X 3' rectangle and you should be good to go

    Harry your the best. No kidding…. In the video you had a pork butt cooking you say you butterflied it. Did you cut all the way thru and the slices were holding each slice up or did not cut each slice all the way thru? I do wanna try how you did it. Can’t wait for your future videos.

      The butterfly butt is to do a pork steak version when you only have 45 mins to cook a whole butt to serve to the public. You can cut into separate steaks if you like. I do the butterfly method so it is easier to flip and sear to cook fast as we did 1,500 samples that day
