Medium to almost medium well. But I do like using your rotisserie utensil to cook it. I made my own Vortex and I would still recommend using a seasoned Weber sear grate underneath it but with the wider side up and the grate flipped so it’s above the adjacent wire rack.
@@HeavyMetalBarBQue Works great on my cast iron grate! I sear the steak first, then cook it indirectly. To avoid over cooking. The hot surface is what actually creates the sear, not the fire. That's why you can get a great sear with a cast iron pan over an electric oven.

You were not kidding when you said you were not done. Will try the closed vent next time i use my poortex (am making a new slightly larger one based on measurments i got from Biggs, so i should be able to get the temps a bit higher if needed).

I'm not sure why the vortex would damage the grate anymore than using a more traditional methods like coal baskets, rails, slow n sear. the grate is always above the heat. What damage were you seeing?

If you've never had or used one, make sure You are using a Stainless Steel grate and not Chrome plated or Cast Iron Grates because it will burn off the finish and then they will Rust! Then, I recalled that you used lava rocks in your cave man steak challenge. So I was thinking "No he's not!" Then you brought out the stick, and I was like YES! The sear really wasn't that good, part of the reason you use grates is to actually get a sear. You ever wonder why grill marks appear on meat? That is where the meat contact a hot metal surface! The air, and dancing flames do not keep heat in one spot well!

How about using the cast iron insert instead so it doesn’t get ruined by the high heat?
I wouldn't do it. I'de only recommend using Stainless Steel grates. If you try it.....let me know how that worked out. Metal On!
