Thanks to the increased prices of spring onions we have adapted this recipe, we still use spring onions but less and have added finely sliced/grated/diced red onions. We use a mandolin over a bowl of cold water, to rinse reduce any strong flavours as much as practical, or use the coarse grater blade on the food processor where we rinse the grated onion, or a simple fine dice all depending on the amount of time we have and equipment we feel like washing up. Any extra or leftovers can be adapted to make onion fritters/bhaji with addition of more gram flour, garam masala and a pinch of baking powder, totaly unauthentic but we only care about practical nowadays any other choice is retarded. We like to have this with rice as part of our main meal or mixed with rice, mixed vegetables, potato in wraps to use up leftovers shredded chicken thighs, or any sliced or diced meats for lunch. Stretches out the meat in the most flavourful, healthy and practical economical way, add some good salsa/sauce/gravy in the wrap or for dipping and a meal fit for a king on a budget.
