I think they mixed up which burrs were in which box. The original ones that were in there in the videk are the silver knight coated ssp cast burrs also known as lab sweet style. The red ones you put in were ssp High Uniformity Espresso burrs with redspeed coating. The original burrs that you talk about if they were a similar geometry but looked like regular tool steel that was most likely the mazzer burrs. You should notice more flavour clarity and less body now with the ssp HU there. Oh and the last burrs without the more aggressive cuts towards the center that's the ssp MP Unimodal burrs. Highest clarity lowest body.
A huge amount of coffee left over in the grinding chamber and a great brushing effort, with respect to other grinder's geometries! (e.g. Niche Zero/Duo ) Is that normal for a flat and vertical burr grinder?
Wow.... huge amounts of retention. I'm a bit surprised, but it makes sense given the horizontal motor design and the auger. Difficult to get in there to really clean it too. The Niche is WAY quicker and easier to clean, no competition. This Z1 is absolutely not faster at all and not CLOSE to being as clean.

Question on Zerno - I have a DF83v with SSP HU burrs which are perfectly aligned and DF64II with the red Sweet Lab burrs - well aligned (not perfect as I had to do gradual shims since there is .01 inch from high to low on the rotating carrier. Anyways I am able to order a zerno next week - worth it given my set up? The bigger grinder I use for espresso and the smaller is my all around grinder for everything else.
Thanks! I would have a hard time suggesting to change your setup given the investment. I suspect any changes might be minor. What machines/methods do you brew with?
I do chemex and hario switch for pour over and for espresso I had a crossland CC but now waiting on a new línea mini. I roast with a nucleus link and do coffees in the light medium to light dark range. I test and measure everything with the DiFluid suite (r2, microbalance ti, Omni)
This is likely the v1. The maker has said the retention behind the burr is much improved in newer versions. Retention is probably even lower with the blind burrs.
Yep there's an extra seal or something in the next version to seal the burrs better. This happens on df64 too. Apparently the blind burrs don't need the extra padding seal part and will fit better now so no coffee gets around them. We'll see!

The retention behind the moving burr looks like more or equal to what you would find on an ek43. The exit shoot retention looks much better.

This is the old Zerno…the New ones don’t have coffee under the burrs it’s been fixed
