Apparently it's because they had trouble making objects break apart realistically when shot, so they just made everything explode when it was destroyed and called it a day.
Fun Fact: At the end of Statue Park if you only smack the guards aiming at Natalia the guards will reorientate there weapons towards Mishkin. Seems like 007 is smacking some sense into the Russians.
I think this is that version of the game that has a faster framerate which somehow causes automatic weapons to shoot faster, so getting shot by them is like a death sentence, and using them causes the ammo to drain too quickly.

The hand graphic probably looks so good because Goldeneye was originally planned to be an on-rails shooter. The first level (Dam) was fully developed and laid out as an on-rails level before Nintendo suggested to Rare "Maybe you shouldn't do on-rails?".
speedrunner here (not for 007, but it applies regardless); a lot of routing is just remembering inputs and general locations, especially if the game in question has aim assist at all. past that, it's just memorization and performance. for Goldeneye specifically, though, the speedrunners are on another level entirely. Runway has a rich history.
If memory recollection is like viewing a best-of edit of the experience, then this is identical to my own, having been sixteen or seventeen and using first job money to buy my n64, this game, and also every sentiment he expresses as he trial and errors his way through it. Just so perfectly dead-on. This is exactly what that was like. I'm 38 now and this is still one of my go-to games. I can't afford to keep up with the console wars but I've managed to keep the best of the best from back in the day.

Nah, screw ADS. It's an annoying game mechanic that should only be relegated to snipers and other guns with scopes. Otherwise, it should be like classic 90's shooters: perfect aim with hip-fire.

Hell, the small model cars found in some of the huts in the Surface levels have the explosion radius of a 25 kill streak.
