In today’s episode of Mr H and Friends, the H family has finally landed in Austin, Texas, and they are hungry! Craving some genuine Texas-style BBQ, Mr. H, Mrs. H, and Baby H make their way to Stiles Switch BBQ for their first meal back in Texas. I can't believe Little Miss H turned down the brisket. Normally she would devour that.
A quick fyi- many of the bbq places during the winter months will offer “brisket chili”. So if you are in Texas during that time make sure you try it. I’ve had it at Stiles Switch and Pok-e-Jo’s in Austin.
Elana will not be scared of any food. It’s a psychological problem that too many adults acquired when young. You guys raised a foodie. Tomato, tomato. You say it how you want. We love your accents. Especially Elana. She’s so CUTE!
And if she keeps eating that spicy food, she'll handle it better and better!
Cucumber, tomato and onion salad is a staple in the south in summer.

The secret of smoking a turkey is in the brining process.
Easy and crucial.
Add 2 cans of beer to your saltwater brine let sit overnight for best results

Keep in mind, cows and chickens especially are smaller and have less fat in the UK than what we get in the US. Health benefits/concerns aside, a much smaller brisket with less fat running through it is going to be a lot harder to make a good product out of.

"vinegar salad" is a southern BBQ staple. Watered down vinegar with some sugar and celery salt. During the summer my parents keep a big bowl of the brine in the fridge and throw in sliced onions, cucumbers, and tomatoes as they come out of the garden. So good!

The pickles they were eating were Kosher Dill Chips. In the US a "Gherkin" is a small pickle, usually only 2 or 3 inches long. Then there are "Baby Gherkins" which are quite small, usually on 1 to 1.5 inches.

Tomato/cucumber/onion is an extremely popular side during the summer at get togethers and for meals at home. It is one of my favorites!
My 3 favorite eaters to watch on all of youtube--welcome back to the good old US of A !!!
If your are going to try to at home you'll need to start with a 8-12 hour brine something like this:
3 cups apple cider
2 cups water
1 cup apple cider vinegar
1 Tablespoon garlic powder
1 Tablespoon onion powder
1/4 kosher cup salt
1/4 cup brown sugar
1/4 cup Worcestershire sauce
You'll want to heat that up to dissolve the salt, sugar then let it cool completely before dunking the breast. Wait.
Then pat it dry and hit it with a rub favorite. Temps vary from 225-275 so somewhere in there for a couple hours should do the trick, just be sure to tent it and let it rest before slicing to let those juices settle.

The next logical step in your BBQ adventure. I always prefer Texas BBQ but sometime I like NC style with a vinegar sauce. NC style is always with the sauce, but I like to try it naked just to see how smokey it is. The BBQ not me naked . . . Oh well. You know. My faves are Texas, Memphis (as long as it isn't sugary sweet), then NC style. In that order. I love Korean BBQ also. I still fix BBQ Bulgogi because it is so simple. Including with NC style BBQ filling.
I like your thinkin'. The next logical step in my bbq adventure is now to try it naked. You're the brilliant idea guy for sure! Who'll show up first, the police paddywagon or a tall beauty with gigantic... Well, nvm...😇

@@kutchie420 Arthur Bryants is good as well as others in KC, but there's probably 10 to 20 BBQ restaurants per state in just the South that are just as good. I've had BBQ in more than 20 states and 3 countries and no one is head and shoulders above the rest. When you talk world class BBQ competions, there's not that much difference top to bottom.

I agree with a previous poster (ChoiceEnvironments), go ahead and pronounce the word "tomato" whichever way you want to. Here in Texas, we don't ridicule people on their accents ..... Heck, Texas is one big, all-encompassing accent (Old South, Cajun, Mexican, German, Czechoslovakian, Canary Islander, Old West, you name it). You speak WHAT you want to speak, the WAY you want to speak it! It's one of the reasons we Texans went to war, to become our own nation. "Beef is King" ..... No three words were better spoken! You three will make fine upstanding Texans!

Don't forget that there are other places in the US known for BBQ. For beef, Texas is tops. But for pork, you should try Kansas City or Louisville. Memphis is also known for amazing BBQ. St. Louis is known for amazing pork spare rib barbecue. There are others. Once you've had your fill of barbecue, I recommend heading to New Orleans and trying some of the dishes they're known for--beignets, gumbo, jambalaya, po' boy sandwiches, fried chicken, and fried catfish. And crawfish! Etouffee is a great dish. And classic shrimp and grits is hard to beat in NO. They have the best shrimp in the world, hands down.

As a Texan. We have a old families barbecue sauce recipe. And to taste test it we use bread!
Kansas City style is my favorite, but Texas and Carolina styles are excellent too. At Thanksgiving here in the US lots of BBQ places will sell you a whole smoked turkey (or a breast) to serve for Thanksgiving dinner. American BBQ, Tex-Mex, Jazz are the US's great cultural contributions to the world. Also, sorry about the Kardashians and the rampant consumer culture thing! Excellent video; glad you are having a good time!
You would like deep fried turkey as well. Its big during the holiday season here, especially in the South. Its not hard, but one must be very careful while doing it. I read an article in the Guardian I believe a few years ago about how the journalist fried a turkey along with some brussel sprouts. He seemed to really like it.
When you get back home, be sure to use a thermometer with the turkey breast. Most people overcook it.

Always ask at a bbq joint if they sell their bbq sauce in bottles. A lot of places do. And if you have food to take home don't ever be shy about asking for extra sauces to take home too.

Welcome back to your second home, y'all! I'm confident the people are going to be wonderful and welcoming to you, but I must admit it is quite brave of you to come this time of year. It's still storm season and the heat is likely about to start to get really oppressive. Make sure you always have something to drink, or are very close to a place where you can get something to drink. You are about to see why we don't consider air conditioning a luxury, but more of a survival device. Love you guys! ❤
If you want to make banana pudding when you get home don't forget to grab the French vanilla pudding mix and Vanilla Wafers before you leave the States. If you want to add a little yummy twist, instead of vanilla wafers grab a pack of pecan shortbread cookies.
Paula Deen uses the Chessman Pepperidge Farm cookies instead of vanilla wafers. My sister worked with someone who used chocolate pudding with the bananas.
@@judykeown Lol, I use the Paula Deen recipe "Not Your Momma's Banana Pudding" but instead of the chessman I use the pecan shortbread.

H fam , YOU do know that Florida and every Southern State has regional BBQ ? The variety of wood smokes , rubs and sauces is endless . Mrs. H if you like the sauces so much you should try Burgoo and Brunswick Stew .

Stiles Switch is me and my SO's favorite BBQ restaurant! I don't know whether or not you'll find yourselves back there at some point, but if so, please try the potato salad; it's perhaps the best I've had from ANY restaurant!

Oh yeah, that's the best way to have turkey! Smoked turkey is great, but deep fried turkey is next level.
Having to live vicariously through you're BBQ adventures in TX. I'm a bit jealous of the TH-cam money that allows you to travel from the UK (repeatedly) to TX for BBQ, and I can hardly afford to eat out at all, let alone travel to TX from within the US.

Stiles Switch! It wasn’t too far from my former home. I miss it.
We have an incredible BBQ place here in Midland, TX (Half Acre) with wonderful brisket. The first thing I do is make a sandwich with brisket, onions and pickles and squirt BBQ sauce on each bite. Lol.
I am a huge foodie, and proud of American cuisine, so love your videos. That being said.....
I would love to see you INDULGE in more breakfast videos.
Our omelettes, eggs benedict, Bagel sandwiches (i.e. cream cheese and smoked salmon/lox, bacon, egg, and cheese, etc), Bacon and eggs, waffles, french toast, pancakes, and believe it or not........there's numerous other American breakfast dishes.

Just To let you know there's Great Barbecue to be had throughout the country. You don't have to just get it in one place. Note: BBQ will taste different throughout the country too. All of it is definitely worth trying.😊
I use my favorite BBQ sauce in place of gravy on mashed potatoes and even as a salad dressing.
