Discada Cooking Disc | Chicken and Rice | Arroz con Pollo

- In today's recipe we're using the Southwest Discada Disc and making one-pot chicken and rice, also known as Arroz con Pollo in Central and South America.
The origins of Arroz con Pollo are somewhat ambiguous. I’ve seen recipes for Cuba-Style Arroz Con Pollo, Mexican Arroz con Pollo and others. I’m no expert, but it seems that the dish did originate somewhere in Central or South America. Regardless of who gets credit for creating this one-pot wonder, it certainly is tasty!
Ingredients
• 5 pieces thick bacon, chopped
• 5 chicken thighs
• 1 sweet onion, diced
• 1 tbsp minced garlic
• 1 green pepper, chopped
• ½ cup red pepper, chopped (can be smoked in a jar or red bell pepper)
• 1 cup black or kidney beans
• 1 cup chopped tomatoes
• 1 pinch saffron threads
• 2 bay leaves
• 1 tsp dried oregano
• 1 tsp cumin
• ½ tsp cayenne pepper
• 1 tsp Kosher salt
• ½ teaspoon black pepper
• ½ tsp fresh turmeric
• ½ tsp fresh thyme
• 2 cups uncooked Aborio rice
• 6 cups chicken stock (5 cups will work)
• 2 tbsp parsley, chopped

This dish has a monster curb appeal. That plate shot when you got done was terrific. I love chicken and rice but never had this. I'd love to make this one. All kind of flavor explosion going on in that bite. Nice cook in that Country Boy Wok. lol

I am new to disc cooking. I would never have thought about a rice dish. It looks really delicious!!! I like the music at the end of the video also.

Thank you Papa. It's definitely a fun cooker when folks are over. You can hang out around the cooker and then everybody can serve themselves.
I just christened mine mothers day.... they are wonderful.... I cooked pepper steak.... although the recipe I had was faulty.... the cooks recipe was less then desired.... the job that the disk did was awesome.... I was able to put a slight char on the meat without actually "burning" the meat.... the meat in the center was juicy and tasty.... the outside has a slight crunch to it but it wasn't a burned crunch....
Jeff again there’s that❤️first bite sh- t eating grin I love so much. Got a new 12” cast iron skillet & this is first thing to cook in it tomorrow got almost all seasoning here, even got the same rice no saffron. Can’t wait got to be delicious.

Since I am newly enjoying your videos, figure I owe you some Spanish lessons. Double R in arroz has a rolling sound. Spanish is really easy to pronounce once you learn the rules, every letter will sound the same every time. You nailed the pronunciation of Aborio. Enjoying your vids can't wait to get myself a Discada.

Propane. They make stands specifically for it, but I use the stand that came with my Bayou Classic Lo Country Boil cooker.

Looks good , but there is no ginger in traditional Arroz con Pollo. Also, you need to add sofrito and a little tomatoe paste at the start with the fat/oil.
Add some spicy smoked sausage and call it JAMBALAYA!!!
