But she actually is a latina in the Italian meaning of the word. Like Spanish portuguese, French. And since she is from Rome then she is from Lazio region (LATIUM) where the ancient latins they were from and where the latin language originated. Unimpressive. Nothing special. True Aglio e Olio doesn’t have peperoncino in it. You should have said that. Really bad photography. Learn to use your phone. Use the landscape format. Also, you didn’t mix the pasta with the sauce thoroughly enough. Shake the pan. Flip the pasta.
Wrong, "true" Aglio e Olio can and often does have peperoncino as an ingredient. Some of the best chefs in Italy wouldn't think of making this dish without it.
It depends, many Italian call this popular recipe only “spaghetti aglio e olio”, some other also add “... e peperoncino”. Someone prefers not to fry the chili peppers at the beginning with the garlic, some other prefer to put fresh cut chili peppers only at the end as decoration, some don’t even put the 🌶 . Sometimes even myself I get confused 🤷♀️
No matter how many garlic cloves you use, olive oil or parsley, whether use fresh pepper od dry chili flakes - it always taste great !
Fresh parsley is a must!!
A tip I learned from Vincenzo is to add the finely chopped parsley stalks along with the garlic, then keep the leaves for after you add the pasta

Another good tip from Vincenzo is to add pasta water instead of adding 3 times extra virgin oil.. don’t you think it makes the recipe less heavy?
@@valyaa5206 I haven't tried the 3x olive oil method, but you could try it with a lot less oil at first. Too much oil would be heavy for me

My grandmother always gently braised one or two whole peppers in the oil. More if she was cooking for many guests.
