Goat Cheese Stuffed Chicken with Duchesse Potatoes ︳About the Dish

    Goat Cheese Stuffed Chicken with Duchesse Potatoes
    - 4 -7oz. Tyson Foods Chicken Breast
    - 2 Anaheim Golden peppers-diced
    - 1 Red Onion-diced
    - 12oz. Plain Goat Cheese-soft
    - 12 Wright Brand bacon slices-thin
    - 1 tbsp Hiland dairy unsalted butter
    - Sea salt
    - Black Pepper
    - Granulated Garlic
    - 1 tbsp Parsley-chopped
    - ½ tsp Crushed red pepper
    DIRECTIONS:
    Preheat oven to 400°. Dice onions and Peppers and saute in butter for about two minutes and Season with salt pepper, garlic, Parsley and crushed red pepper flakes. Allow to cool at least 5 minutes. Combined with softened goat cheese.
    Down a layer of plastic wrap to cover your countertop surface. Place the clean chicken breasts about four inches apart and cover them with the second layer of plastic wrap. Using a mallet, pound the chicken until it is twice its original size. Make sure that the thickest part of the chicken becomes thin.
    Season the chicken with salt pepper and garlic on both sides, and then smear stuffing on the chicken away from the skin side. Roll each breast up and make sure all the stuffing stays inside.
    Play 3 slices of bacon just overlapping each other. Place the chicken near the bottom of the bacon wrap and roll on an angle until the chicken is wrapped in the bacon. Place the chicken flap side down on a plate and repeat until all the chicken breasts are wrapped. In a cast iron skillet set to medium, place the flap of the bacon of each chicken breast down in the skillet. Once the bacon has started to brown and the flap has sealed, turn the chicken and brown on all four sides. About two minutes per side. Cook the chicken at 400° for 20 to 25 minutes or until internal champ is 160°.
    • Duchesse Potatoes •
    INGREDIENTS:
    - 2 lb Golden Potatoes-peeled
    - 1/2 stick Hiland Dairy unsalted butter
    - 3 eggs
    - Salt
    - Pepper
    - 1 tsp Parsley fresh-chopped
    - 1 egg/1/2 cup cold water-egg wash
    DIRECTIONS:
    Steam potatoes or simmer in water until tender. Drain and I calendar. Add the remaining ingredients and blend until extremely smooth. Place a piping bag over a small pitcher with a star tip and fill with the potatoes. Pipe the potatoes onto a sheet tray with a parchment paper, Wash them with egg and water mixture and cook in 350° oven for 20 minutes or until golden brown.
