I’m a plant based chef from California who is now in Ecuador. I have been in the plant based space my whole life. And for the last decade I’ve done whole foods, 8-free foods, foods free from the most common 8 allergens. Here in Ecuador, the herbs and spices are different, the things as plant based people have access to aren’t the same as I am accustomed to; in California I can literally source every ingredient and have a hundred options of places to eat or get cash and carry eats. Here, it is very limited. So I’ve started breaking the rules. I’m making seitan and vegan cheese from scratch. All the ingredients I can source here that are plant based are fair game. And I’m having so much fun.

There is a large expat community too though, vegan retreat centers, and many who have food allergies or avoid animal products for health reasons. I have cafes, restaurants and private clients who are interested in my offerings and have just secured a space to have a popup on the weekends for a supper club. It’s a beautiful place with so many opportunities.

I live in the South of France and eating plant based is a bit difficult here too, lots of products like oyster mushrooms etc are just not available where I live. It can be a bit frustrating.

I got rid of my television years ago. With shows like Derek's, who needs to stream Netflix?! You've got state-of-the-art viewing right here ... and for FREE! 😃
The warping is the wood absorbing the moisture from the foods you cut, the humidity in the room and the from the wet towel. A guitar neck does the same thing from the humidity, only much more slowly, but has a compensating mechanism you adjust called a truss rod. Your strategy of flipping the board allows gravity to relax the wood fibers to settle back to neutral before they warp back the other way from moisture again.
@@GINZO4849 I wish they were affordable everywhere like beans and potatoes, would help them be more popular :( For me in SoCal nearly everything is expensive but at least I can sometimes get 5lbs of these for $5 at a Korean supermarket. But go to a health food store and yeesh, these can easily be $13 a pound!
Look into local farms. I’m in the US, (Massachusetts) and we have a local network of farms that started delivery during Covid. My son and I both get 3 lb boxes of amazing, fresh mushrooms delivered every month each. They also sell at local Farmer’s Markets. I can’t wait to try these recipes. I can’t eat fried food, so I’ll adapt this for my air fryer. 😁

I'm mostly WFPB, & always vegan. I think most plant based doctors would cut you some slack & probably love you too. These deep fried mushrooms would definitely be a treat for us all!

What is WFPB? I am not vegan, vegetarian or really restrict myself in any way entirely lol but I like to eat a lot of plants and such because they are delicious and healthy. I can understand fully why some people choose to be vegan or vegetarian or whatever; I can't really understand carnivore people though even though I am a meat eater (sorry guys).

The warping is because of uneven water absorption and drying. Wood fibers expand as they absorb moisture and shrink as they dry, so if one side of the board sits damp for long enough it'll grow bigger than the dry side which causes the bow. I prop my board up at an angle after washing so both sides can dry evenly. I've left it sitting on a damp towel over night a couple of times which left it with a big bow. I fixed that by laying a damp paper towel on the concave side until the moisture content evened out and the board flattened itself out, then I stood it up to dry like normal

I bet the Izakaya's in Vancouver are awesome - but... If you ever come to Japan, it's nearly like heaven. I say nearly, cause they do a lot of traditional Japanese foods, which means lots of fish (and meat) dishes. This doesn't mean there aren't plenty of edamame, tofu, veggies, fried whatever dishes too. Plus beer, sake, chuhai, etc. Best part is that Izakaya's are so steeped in Japanese culture that just visiting them transports you deep into an epic aspect of Japanese-ness.

Thanks for explaining exactly what you are doing when wiping your cutting board, since I'm just learning to cook. Becoming vegan has meant that I MUST cook for myself and it's feels overwhelming sometimes. Your videos have taught me so much, and even though I struggle with some of the recipes, I keep at it...for the animals and a kinder world.

I really enjoy these videos! I have been a vegetarian since 1980’s (I met a beautiful cow) and mostly vegan for the past 4-5 yrs. I have tried so many of these recipes, not as good as Derek. Frankie is just so adorable and beautiful.❤🐶

I just made my first oyster mushroom dish today: plain, stir fried oyster mushroom just to get an idea of them first. Been a lactose-free pescatarian for over a decade now, but never dared to try out this weird looking things until I found your channel recently and got intrigued. Thanks for explaining exactly what you are doing when wiping your cutting board, since I'm just learning to cook. Becoming vegan has meant that I MUST cook for myself and it's feels overwhelming sometimes.
