some of my fondest memories are of walking the streets of Thailand and trying the street foods. It didn't matter if I didn't know what it was, if it looked good and smelled good it would be good. Oh, and all the meat was boiled and grey by the way." Yeah, nah. You need to trim your meat. Using every part of the animal and eating disgusting food are not the same thing. Trim the chicken. I would not touch this food.

Double frying is a technique to allow as much moisture reduction as possible, yes. By letting it cool more water leaves, then you finish it with a flash fry to get it nice and crispy.
