Good Thing We Didn't Throw This Out! Julia's favorite candy is the cranberry hard candy. So after one of the cranberry batches stuck together the idea came to life! Instead of throwing out the stuck together cranberry hard candy we smashed it up into little tiny pieces and made a bark out of it!

💑 About Hercules Candy
Hercules Candy has been on Steve’s side of the family since 1910(ish). When he took over in the 70’s, he anticipated after 10 years of hard work, he could move the business out of the basement and into a real storefront. Unfortunately, it took until 2018 for that to happen, but hey at least it happened! Steve and Terry own the shop, Craig (the social media manager) is their son, Cara (wrapper and shipper extraordinaire who is poised to take over the shop one day) is their daughter and Leah (who doesn’t love being on camera and is very elusive) is their oldest daughter. @@HerculesCandy Well that's the perk of a sample pack, you make a notation that it'll be random flavours in the sample pack (whatever flavours are available at the moment) and like "there will be 5 flavours in the sample pack, which 5 flavours depends on what is currently available at random"

5:08 white chocolate and cranberries go so well together. White chocolate/cranberry/raspberry is one of my favorite combinations I ever tried seconded only by white chocolate/dried coconut/dried apricot. I think white chocolate is especially great for fruits that are more on the sour side in flavor profile.
I also love white chocolate raspberry. But anything flavored this way always sells out so quick.
Ok, I know this video is about bark, but can I just say how flippin’ amazing “Terri’s Terrific Tart Treats” are?! I’m glad I splurged for the big box! All the flavors are great but my favorites are blackberry, peach and lemon/lime, and I can’t wait for when you add in the green apple! Perfect creation!

The only suggestion i'd make if you want to keep doing stuff like that;
get sifters that way you can sort out the big bits with way more efficiency.

You should do half in white chocolate and half in milk chocolate and have a contest to see which one sells the fastest and let everyone know

Not that you need it but a little tip. Open the bag a little so when you pour out what you crushed the big stuff stays inside the bag.

Those look delicious, I love dried cranberries in sweets, and savory food, they go with everything! I just finished watching another video of yours with the toasted coconut and at first, I thought it was the crunchy middle stuff in a Butterfinger instead of toasted coconut. If you guys haven't tried that yet, you should make some kind of chocolate ball rolled in whatever is in the middle of Butterfingers candy bars! I love Butterfingers, but sometimes it's hard to chew the middle, but crushed up may make a big difference!

One of my favorite combinations is Cranberry and Bacon. I’d love to see you take a big bag of Bacon Bits and put it in the Cranberry Bark. Yummy!

Me! They seemed much more cheerful and joked more.
I suspect the problem behind the cranberry being so hard when it finally cooled had something to do with it having too high of a sugar content. Perhaps adding a little water to the mix to thin it down during the heating process.
I hope to see things like this in vegan chocolate sometime! Maybe oat milk chocolate will go down in price enough that you guys could make things with it without them costing a bunch extra. lol

You know what’s amazing?! I went to school in Abilene TX. They had a candy site there that did white chocolate covered fresh cranberries. It was AMAZING.
Edit: OH NO! You mentioned white chocolate. Yes! It’s amazing. Do that. SO much better than milk with those tart cranberries. Promise. I’m sure milk is good, but WHITE is SOOOOOOOO good with cranberries.

Bark chocolate bars? Crushed hard candy or chips in the the bar mold. You could do ruby chocolate with these then.

God, the things I would do to be able to work at a place like this. You all are so friendly, and I have a serious curiosity in the whole manufacturing proses of all these sweets (not to mention a serious sweet tooth lol) I used to work in an ice cream/candy shop, so I have a little idea of what goes on, but still. I’d love to work at a place like this 🥺🥺🥺🥺
Food processor or hammer would probably crush the hard candy easier than rubber mallet it’s just bouncing around instead of truly breaking them

When you are making hard candy on the big metal cooling table, how much metal goes into the candy? looking at the bag after hammering it i guess you're getting some plastic for free with that bark. you might want to come up with a different method of crushing that stuff.
