Grew up eating oxtail, ribs, ham hocks. Back in the day these were considered the throw away meats. Now i can barely afford them lol. Great recipe. Mom would make it into stew.. american version.

So I made your version of Jamaican version of Jamaican oxtails with a few slight twists. I didn't have Habañero peppers or scotch bonnets. So I substituted pickled jalapenos and Chipotle pepper powder. I also added in a can of can of chopped tomatoes and and parsley And extra garlic. It turned out delicious, delicious. I'm amazed

I remember when my mom would send me to the neighborhood butcher for a large package of bone for soup. I watched her prepare the bones to make soup or stew. Oxtails or soup mix. Years later I used to make spaghetti sauce using oxtails. My friends would beg me to make more so they could enjoy my gravy. Then I couldn’t find oxtails at my butcher. No one else wanted them. I’d find them at Dominick’s because women older than me, would make gravy using oxtails. Then I couldn’t find them. Then they were discovered by another generation and what I’d get for nothing, they were charging $8.00 A pound. Amazing. They are fabulous when you find you perfect recipe. I still make gravy or stew. It cost more than a porterhouse but it’s much more delicious. Thank you Jeffrey. The price will triple now because of you. I love you anyway. Xxxxx

I'm definitely going to try this recipe! My French grandmother and mother would make oxtail stew in their pressure cookers without the Jamaican spices and it was still wonderful. Just imagine the most wonderful beef stew times 10. I've been pressure cooking for over 30 years, and switch to the instant pot 2 1/2 years ago. I use my instant pot weekly and have tried several of Jeff's recipes with great success. Thank you for your You Tube channel, I enjoy it greatly. Wishing you much success with your cookbook.

For anyone watching him eat the oxtails, and you're thinking he's being overly dramatic, I can assure you that he's not! Oxtails really ARE that delicious! (Assuming they're cooked long enough to fall off the bone.)
Brazed oxtails burgundy, made in a cast iron Dutch Oven (either "stovetop" or in the oven), pressurecooked, made as a stew in a slow-cooker... it is the MOST delicious cut of beef that there is! The tragedy is that there's only one tail per cow, and, it's rather small (compared to other cuts of beef).
It's an extremely "tough" cut, and if you cook it like you'd cook a more tender cut, I doubt you'd even find it edible (assuming you managed to chew a bit of it off the bone). But cooked slowly in moist heat...words truly cannot describe it.

My wife found your website and TH-cam channel about a month ago. I watched a couple of videos, and honestly, wrote it off. Since then we've made your Bolognese twice in about a week. Just last night I made the Butter Chicken Bowtie Pasta. Oh. My. God. I mean, you had me at 'Butter', but DAMN! (Reader, if you're at all a fan of curry, you gotta make this.)
You're never gonna convince me to make a hamburger in an Instant Pot - I don't grill, but I've got a really good stainless pan that is the right tool (for me) for that job. But from now on I'm giving you the benefit of the doubt. I'd especially like to see a navy bean soup recipe from you! Keep up the delicious work, sir.

If your heater dries out the air so much in your house (or apartment!) in the winter time each year, ...
... and you get nosebleeds 🤧💦 from time to time, take a large drinking glass, and fill it with water, and put it by your bedside, especially when you’re asleep at night.
And keep refilling it every day, as it evaporates as well. (It MAY evaporate 2” or more PER day!!
Also, put a large cup of water in EACH room of your house, or apartment (especially the living room or whatever room you spend the most time in.)
Of course, the only room you don’t need to do that in is the bathroom, because it has enough natural humidity 🛁🚰🚽🛀 in there just from regular use of the facilities there.
Also, take a big, deep (2”!!) aluminum (13”x9”!) pan, and fill it with tap water, and put it underneath your bed as well.
REFILL it as it evaporates each day!!
THIS WILL HELP CUT DOWN on those pesky nosebleeds in the wintertime, when your heater is working overtime all winter long!! 😳🙄😲😱🤯
    👍❤️😉
Or occasionally run a humidifier (with plain distilled water) once in awhile, for an hour or two per day.
The heater dries out the atmosphere till your sensitive nose & sinus tissues (inside your nose!)👃can’t take it anymore.
    Try it!! It works! 👍❤️❤️❤️❤️😉😍😘🥰🌹

Glad you discovered the amazement of oxtail, which used to be a very cheap cut of meat. I followed the recipe exactly and found it way too rich, almost inedibly so. Since oxtail already has a good amount of fat in it, the extra butter is not needed. (I'm not looking for a Paula Dean comeback.) BTW, I couldn't taste any heat despite the deseeded Habanero. Next time, I'd add chili powder to it, or some of the Habanero seeds. (BTW, Jamie Oliver has a great oxtail stew recipe.)

Err the tomato paste totally didn't dissolve at the end..better to add that before braising. Also, waaay too much grease in the gravy, spoon most of that out
