I watched another video, I forgot the name but she’s from Sichuan, China and she says sesame paste is actually not included in a traditional dan dan noodles and was actually a bit loose and light just like what Marion did here in this video. If I’m not mistaken, adding sesame paste is a modern take on dan dan noodles. EDIT: I found the name of the other youtuber: Cooking Bomb, she is indeed from Sichuan. So Marion didn’t do anything wrong here.

Tahini isn't traditional. Traditionally it would be Chinese artisanal sesame paste, which is thicker and stronger than tahini. But not everyone uses sesame paste; it's not required.
Is there a reason why you don't include roasted sesame paste? Other dan dan mian recipes have it. Anyway looks delicious and am going to cook your version today 🍗♥️🌸🙈😋

When I lived in China I saw both versions, so I guess it's possible to add or exclude the sesame paste. I exclude it sometimes when I want a more fragrant/chili flavor. Or add it when I want it to be more mellow and nutty. Whatever floats your boat I guess.
Marion, what have you done to me? That chili oil recipe has me hooked! The conflict is that I love it, I love the toasty aroma (not spicy or overwelming when I smell it) and I find myself putting more of it than I ever thought I could handle on your recipes! LOVE your cooking!! XOXOXO
It should do, yes, if it's traditional. It also should have some lightly boiled choi sum or pak choi. If you can't find the sesame paste you could substitute tahini or even peanut butter. I feel the sesame taste is an essential element of Dan Dan noodles so i was a little disappointed with this recipe. Try Souped Up Recipes on TH-cam for a more authentic version.
You're version looks great and I've Dan Dan noodles many times before. After researching recipes from China, and Chinese expats around the world, I've created a favorite version. I typically use a foil pouch of Sui Mi Ya Cai, but yours, in the crock looks fantastic. Can you share a link?

I wonder if you could use sauerkraut in place of the pickled cabbage. It sounds like it would be a similar flavor, it's salty and acidic from fermentation.
It would work just fine, especially if you used a fermented sauerkraut rather than just soaked in vinegar. I was able to find preserved cabbage at my Asian supermarket and it tastes very much like a good sauerkraut, except this one was packed in chilli oil, so it was a bit spicy.

Marion used thin wheat noodle so I reckon that is the ideal type of noodle for this dish. That said, I don't see any harm in using egg noodle. I think it will be just fine.

They're in the section with the other Oriental sauces and spices although, my Walmart has not had any for a while. It may be because they are trying to get more essential items in stock.
You can't substitute Yibin Yacai for pickled cabbage! That's like substituting sour kraut for pickle relish. This is a dry noodle dish, so why would you add water to the sauce? To get that creaminess, use oil and/ or sesame paste. You can even use a little of the rendered fat from cooking the pork. This meat topping should be made from pork belly that's been minced with a cleaver. When it's stir-fried, it will easily get a crispy texture.
I have a large Asian supermarket near me that sells a variety of dried Chinese noodles. One of the varieties is actually called "Dan Dan Noodles" they are really thin (somewhere between spaghetti and angel hair) and very straight. Any thin wheat noodle will work, though.
Actually authentic version (sichuan area) does not use roasted sesame paste at all. Version with broth and sesame paste is used with Hong Kong style dan dan noodles 😊 So there are TWO different "original" versions from dan dan noodles + every chef has it own variation from these 2.
You must make sure that the pork you use is at lest 50% fat - belly pork is perfect - and I cut mine up by hand so that it is chopped rather than minced.
You can get Sichuan peppercorns off Amazon, but I have found them to be poor quality. I found some great Sichuan peppercorns at MalaMarket.com. I've also found black rice vinegar, a.k.a. Chinkiang vinegar, on Amazon and in several of my local Asian grocery stories here in the Midwest U.S.A. FYI.
I added some corn starch to my pork meat and also added sesame paste to my sauce. I see you have omitted it from your recipe. I think it ads a lot of flavor to the dish.

I would say there's no substitute since it's a really unique flavour, but dry sherry could definitely be used.
