Slow Living During Christmas | Simple Countryside Life | Gingerbread Cookies & Baileys Hot Chocolate

- How to live slowly and thoughtfully during winter time? Winters have always been my least favourite. I get severely affected by weather and deal with winter apathy a lot. Festive period helps to brighten my days, but there are also other ways I find joy this winter.
Gingerbread Cookie Recipe:
300g flour
100g butter
100g honey
75-85g brown sugar
1 egg
1/2 tsp of baking soda
1 tsp of ginger
1 tsp of cinnamon
1/2 tsp of ground cloves
1/4 tsp of ground nutmeg
1/2 tsp of coarse ground pepper
pinch of salt
zest of half of an orange
Melt butter with sugar and honey on the stove and let it come to a light simmer. As soon as it simmers, take it off heat and immediately add baking soda. Mix vigorously as the mixture bubbles up and thickens. It will change colour from dark brown to light brown. Set aside to cool a little bit.
In a separate bowl mix flour, spices, salt and orange zest. Set aside.
Add 1 egg to the slightly cooled down honey mixture and mix quickly not letting the egg scramble. Pour the liquid ingredients to the dry ingredients and mix well. First use a whisk or spatula, then with your hands. The dough should turn out soft but not sticky. If it's sticking to your hands, then you need to add a little bit more flour. Leave it in the fridge for 1-2 hours.
Roll out the dough about 3mm thick and cut out the shapes.
Bake for 7 minutes at 180C. If you're making your cookies thicker, you'll need to increase the baking time. They will expand slightly in the oven, so make sure you place them further apart on the tray.

There’s a coziness of being in your home shutting out the chaos of the world. I love a very simple old fashioned country Christmas and it makes me so happy to cozy up my home and just use Christmas lights, oil lamps and candles. It is probably one of those "oh yeah, that's right" things but I had no idea that thatched cottages when the roof is new are not grey but brown coloured!
