    My wife and I canned chicken this past February and couldn't believe how easy it really was. The night before last we used a jar because she forgot to thaw some out for supper. Tasted great and very tender. We've done ground beef, chili and homemade soup.

      Can I cook the chicken all the way before canning it? Want to try this to prep for my children but I dont want to risk messing up that much meat. Thank you in advance.

      @@melissaohlrich2418 look around to confirm but I'm seeing that is possible. Look for the videos where a cooked Turkey or Chicken was used to specifically "pressure can" different than other canning methods.

      try canning beef roast too. absolutely as tender as the chicken. I'll bet she has a tutorial for that too!!!😊

    I absolutely love that you at least put the fast forward footage in your videos, I always felt like I was missing something when you just skip to the finished product. Thank you for taking the time because I sure enjoy ALL of the process. The chopping, the par-cooking, the filling of jars... SOOOO satisfying to watch! I'm on my way to the store right now to pick up boneless/skinless chicken breast for 1.77 a pound, (I hope that's good), for canning!!

      $1.77 a pound???!!! Where do you live??? I’m in the middle of Canada, on the nw shore of Lake Superior. I don’t think I’ve seen B/S breasts for under $5-$6 per lb. and that’s usually those flash frozen things. We are going to Arizona for 2 months so I will get to have some deals!!!!

    The last time I canned chicken, I par-cooked it in my electric buffet skillet. Doing it in the oven looks so much easier, so I'll definitely do it that way next time. I love having home canned meat in my pantry. On the days I don't feel like doing much cooking, or when I have surprise guests, it is so handy to reach into my pantry and grab a jar or two of something to put together a quick meal. Every time I watch one of your canning videos, I learn something new. Thanks for the inspiration!

      I use my instant pot on slow cooker mode. I will usually put it in to cook for 2 hours and go to bed. After the 2 hours it switches to keep warm. When I get up the next morning (I usually sleep about 5 or 6 hours), I will debone if needed and I put my jars in the oven to heat them up while I get the canner set up. The keep warm function gets it to the 3/4 mark without having to babysit it.

    I am new to canning. I bought an All American Canner and all the other equipment I would need. I decided this was the year I would learn to can. I'm gathering information, recipes (I do have the BALL Canning Book) ideas and hoping my garden comes in soon. I buy one or 2 boxes of jars when I go shopping so it won't be a huge expense at one time. I'm so glad you came out with this recipe when you did. I would love to try this. Oh my gosh, I have never seen chicken breast that beautiful before. Oh I wish I could get something like that here. What a wonderful Idea to can in bite size chunks, all the many things you can make from that, pot pie, chicken salad as you said and different casseroles. I love just chicken and rice. This may be one of my first canning projects. Thank you!

    Yes yes yes on the siphoning! Thank you for that tip. I’ve had better luck if I keep the heat on my canner turned to where my weight jiggles about every 10 or 15 seconds. When I turn the heat off it’s not such a drastic drop and has helped with siphoning a great bit. Also changing to the All American canner from a presto helped a bunch too. I will def add your tip to my process too. Thanks for sharing your wonderful knowledge. God bless!

    Canning more tomorrow..drum sticks were .98 lb..and I bought 3 big packages of chicken breasts! Thank you for teaching me how to can. So wish I learned this 30 yrs ago! It is such a blessing to have good food on hand and in storage.

    Hi Linda, I just happened upon your video and I loved it. I used to can 50 quarts of tomatoes every year. I never caned any meats. This is amazing. I was hoping to hear that lovely sound of lids pinging while they cool. That means there is a vacuum in the jars. I always had a great feeling of pride when my pantry was full of things I canned.

    You probably won't see this, but thank you Linda! I finally got over my fear of an exploding pressure canner and used my canner for the first time since i bought it 1 year ago. I par-cooked the chicken, added broth, and canned it! I haven't cracked a jar open yet, but I'm pretty excited to be able to store preservative free food now at home and have food security.

      Mary Playford, meats are the easiest to can, don’t put it off to long because you’re going to love the results and wish you had done it sooner. If you want another excellent video to watch on canning chicken “Boss of the Swamp” has an excellent video on canning chicken.

    Linda I never thought about doing the parcooking in the oven like you did. I’ll use this method next time I do chicken. I don’t like the raw pack method for meat either especially chicken. I have been watching this video in segments because I’m canning 14 quarts of our garden raised red potatoes. I have 2 canners going at once. Canning is Such a soul soothing practice!!!

      The raw method is a bit risky for food poisoning. Safer to cook meats before jarring. Then add the broths and then boil.

    Linda, thank you so much for this video on canning chicken. I have never canned meat before but years ago I canned all kinds of vegetables and fruit and Jellies and jams. I am getting back into it now that the meat and some vegetables are scarce in the grocery store. I am working on building up my prepper pantry and Jars of chicken and broth are a good start. I look forward to your other videos. You are very sweet and enjoyable to watch. I am going to get started right away.

    Put together the French spice mixture and it smells great and tastes great!
    Use homemade bone broth, but love the better than
    Bouillon to use and keep plenty on hand. Miracle item to
    Have on the shelf! Great video. You are like the sister I always wanted but never had!

      Rosalie Fox canning meat is great, better at least partially cooked/browned before canning adding a little broth.

    So glad for your video! I am planning on canning chicken but did know whether to do raw packed or par cooked. Now after your comments and some comments in the notes I’m going to do the par cooked! I don’t want to go thru the process only to have it taste like fish!

    I usually portion pack and vacu-seal all of my meats, but every bad hurricane season when the power is out for a week or so, I spend a week canning everything that I have in the freezer at that time. LOL, it's hot in the house, so might just as well can, right?! I'm always amazed at my neighbors - they either spend a fortune on gasoline for their generators, and whine and moan about all the food they lost. They only thing I lose are cheese and yogurt cultures, and yeast.

      I did the same thing during Hurricane Harvey. Everyone had bought up all the canned food. There was still a ton of fresh pork and beef roasts in the meat dept. So I bought a bunch of $5 roasts and spent all that night canning pork and beef for 1/3 of the price that most spent getting ready.

    I really appreciate you saying why you par cook. I haven't ever canned chicken and I know that some raw pack, but would hate to do a bunch of chicken and have it less than satisfactory, tuna like.

    I love the timing of this. Its a good reminder as I use your herbs de provance when I can mine. I just used my last pint & a half jar last night. They have chicken breasts on sale for $1.99/lb for 3 days here at Sprouts. The other store has them for $3.99/lb this week so I know to get the good price at Sprouts while it lasts. 😁 Also, I'm so glad you are canning again!!

      We also had a chicken sale where I live. Chicken breasts are 1.99 lb and legs .98 cents a lb!

    I just used tattler lids for the first time canning my home grown green beans. I no problems. I can raw pack chicken as a substitute to tuna. My family loves the par cooked chicken in broth best.

    Good to know about the fishy flavor on raw packed chicken. My family and I do not like fish, so that would be extremely disappointing. Hoping to can some chicken soon.

    Hello Miss Linda. Gosh I love all your videos. I've been binge watching them all since this whole pandemic thing started. You do an excellent job of showing and explaining everything to us.     Had a tummy issue with our dog. I did raw pack a small batch of white meat chicken for her. No salt, or seasoning, but I DID put in a teas -tablespoon of finely diced carrot. Nothing else. I don't know it it was the carrot....but, I tasted it, and it was just chicken.......The carrot maybe helped? If I wasn't in such a hurry...I would have cooked it a bit first. I did not add any water or broth...just chicken and carrot. I am doing a batch of OUR chicken....but I will do it YOUR way!

    my question is this -
    instead of cooking the chicken in the oven -could we boil it in the pot with the broth?

    I stopped using Better than Bouillion, even though it is delicious, because of all the chemical additives. I don't trust them to be healthy. Now I use Herb Ox bouillion. At what temp do you roast that chicken?

    Oh! And the taste is just Sooo much better than that corn soaked cardboard they call chicken in a can.

    If you would add to your comment section the ingredients, it would be very beneficial to me, and I am sure many others. As a non-cook-learning-to-cook-and-can, I am not familiar with some of the ingredients names or brand names. In particular, the seasoning you used for the chicken, I cannot discern because you said it so fast. I am sure it's my lack of knowledge, but I think others would appreciate it as well. Thanks for your videos. They are top notch.

    Love you Linda! I would like to see some canning done using alternative sweeteners. I can’t seem to find much on using Stevia or similar as a replacement in items like pie fillings, etc.

    I’m knew to this and a guy so I need all the details: how much better than bullion did you make up for the 16 lbs of chicken, and at what temperature did you par cook the chicken?

      Just to help out a bit, a pint fits about 1pound of chicken and i usually do 14 pound a shot and use a bit less then 3 liters of bouillon.
