I think Winston had a plan for the end. It wasn't guaranteed, but he trusted John's ability to walk away from certain death. Notice that he fired a couple of shots into John's bulletproof clothing, paused to let John realise what was happening, then circled around him slightly while firing to push him towards that bit of sloped roof/awning/whatever.

The scene where he reassembles the revolver was a reference to The Good, the Bad, and the Ugly where Tuco (the Ugly) does the same thing. Also John cut Zero's tendons so that's why he went one handed

The blowfish scene is quite good because if you look up blowfish it is very poisonous unless it is made perfectly by a master chef even making slightly wrong can have FATAL consequences if consumed she know it's ok to consume because the high table has very high standards so even if they don't know the person at all they're is a hidden trust with the people they use or work with nothing is above the table except for 1 person.
Interestingly, Zero is played by Mark Dacascos, who was the Chairman on Iron Chef America.

In John Wick 4, they show briefly about why high table is so powerful. That is so amazing. We get to know a little more about high table in John Wick 4.
NY gun laws are extremely strict so even old single action unloaded guns must be disabled. Thats why John has to take parts from several to make one work. Fortunately, all the bladed weapons still worked. The CQC (close quarter Combat) techniques John uses are to ensure that you can turn you back on them and focus on other threats knowing the last ones are neutralized. The 2 shots to torso and one to the head (Mozambique Drill) are a very effective way to achieve that goal.

Much respect for Halle on this movie… she spent 6 months training and living with those dogs… anyone that knows anything about Belgian mals knows they are like German shepherds on crack… super intelligent and super hyper… they also make bad ass military/security dogs if you can keep them active… and as displayed in this movie they are amazingly athletic fur missiles that can clear 10 foot walls without a boost and 15 or so foot walls with a boost.
