      @@Socratica well, i've been following for years (i think at least 3? maybe a bit more) and it *really* shows. the quality of the content and the presentation is superb, even if a video is about something i think i know inside and out i will usually watch it because i always get something out of it (even if it's just thinking how you approach the pedagogical aspects). and perhaps most striking of all is your integrity as a team, the respect you have for all audiences, it's abundantly clear to me that your mission really is what you say it is, and i can't say that for many other channels (even ones i respect, and whose content i enjoy not that i blame them for cutting corners or focusing too much on marketing/PR).

    Thank you for a very comprehensive and informative video timeline of chocolate's origin, molecular components, cultivation and the processing of this delectable delight! Your analogy of the various types of grapes in a vineyard to strains of cacao was spot on and I enjoyed learning about the different types of cacao with Criollo being the *Best of the Best!* I didn't realize that making chocolate was such an involved process, especially about the tempering of cocoa butter and the six polymorph phases with phase V producing the optimum result! Thank you my *Socratica* friends for such an enlightening video about chocolate!

    I love your channel, this one episode is gold, you cannot thank Eric from the Good Cacao enough.
    I am a bit doubtful about the origin of the cacao plant.
    Would have liked if you mentioned how the flower is pollinated, which is interesting.
    What I would like to know is if cacao was created by selection as maize was by the mesoamerican cultures

    Now, *that* is my kind of lab! :-) I remember the different crystal structures of cocoa butter from when I was studying food chemistry. Much tastier than the protein crystals I otherwise grew.

    So I have slammed six ounces of raw cacao powder today already and I feel SLAMMIN'!     SOCRATIVA PLEASE READ THIS
    Hi Socratica, you seem to have the answer to everything, i just discovered your channel recently, and it seems by seeing your videos that you like everything. I have one question for you, if you could answer, it would be awesome!, tho it's a long text, hope you have patience...
    I am constantly depressed on how i was educated... like... i was a very smart kid, and i used to ace on every test on primary school(including somtimes the teacher would give me a test from one year above mine and i woudl still have 100%). But when i realized the others that took bad grades and almost failed and reprove we're always on the same stage (class) as me, i started to understand that if i couldn't climb levels (skipping the 3rd year for example and going for 4th), i started to don't give a damn about school and learning (didnt see the beauty of learning everything on that time and no one mentioned it)...
    And the class had the policy the if one classmate does anything bad everything has to pay as him as well.
    I started getting bad grades and stuff like that just to pass the year...
    I started earning a lot of bad habits and addictions, such as videogames and pretty much that...
    Then, when i got into highschool i started studying again, hoping i would only achieve 100% on every single test as before... Not what happen. Then i got depressed because i only had 83% and stuff like that, even knowing everything about the subject (feels like it misses common knowledge that everyone knows but since i started to zen mode on classes since 5th class i didnt have it), i couldn't nailed it. I feel like im steel depedent of videogames... and i think more about videogames than things that i should think like how the universe works... I can't express well for words the things i think, and that frustastes me... Feels like i am totally another person and i waste all my potencial, and i am ruined cause all of the videogames... feels like if i did the highschool when i was seven years old i would get better results...
    I feel like it's too late to understand any kind of subject, everything depresses me, feels like i want to understand everything in one day to compensate all the other seven years going blanked that ishould have learned every cool thing in the universe (since the child mind have a lot of capacities) instead of spending doing none (i could have learned this things but i didnt know it exists so i played videogames)... BTW now-a-days i start to have interests on everything but feels like its too much to start on a older age (18). Feels like i want to think and i constantly have breaks... maybe because of that zen thing i used to do... like i cant be concentrate... tho i dont have tDah. How can i dont have this breaks and focus concentrating?
    I would like to know if you were always learning new things since little, or if you started to learn things later, i would like to know if you know how can a person like this achieve the cognitive level she had when she was smart. How should i train to don't have this mental break while thinking of something ( i didnt have this when i was younger)? (i would like to see your opinion in this answering comment (not from any other person like a mental health professional) because it always makes sense even if you dont know which is the most probable thing).

      What you are describing is something that happens to so many people we know! That feeling like your best years are over, and you can't figure out how to get back to that earlier age when you had so much potential. Don't worry. These are seasons that we all go through. We especially got this feeling in college when we were SO OVERWORKED that it felt like we didn't know how to learn the most basic thing anymore. But when we graduated and started our jobs, all of a sudden we realized - oh, our brains still work, we were just too overwhelmed by our workload in school. Wouldn't it be a great thing if you didn't feel like you had to cram all your learning into a few years. Really, that's our aim with Socratica - to help people keep learning, even long after they leave school.

      what makes you say that? the format is very different and the scope is broader, it's certainly not as information dense, is that what you're referring to?

      @@foobargorch I think you're confusing production with content. I'm referring to the actual production of the video, like the audio, camera work, editing (to an extent). The entire time they were interviewing at the chocolate maker's shop, his audio was absolutely horrible. You can tell they tried to fix it by using a noise filter that samples a noise floor and actively tries to attenuate that floor. In some parts the audio is barely audible, almost as if they just gave up. This is a stark contrast to many of their other videos. Watch any of the Python series. The production on those videos is absolutely perfect so I know they know what they're doing. It would be nice to see them carry that attention to detail across all of their videos so I'm not struggling to hear the dialogue . Especially since the content is so good.

    Can we please stop teaching that cacao is divided into three categories? I know it is easy but it is just inaccurate. There are at least 10/11 different groups of cacao family and the taste is not only influenced by the genetic but also, if not mostly, by the fermentation process. The quality of the chocolate bar you eat is mainly due to the skill and love of the farmer that grow and ferment the beans and the chocolate maker who roasted, conch and temper the chocolate into a beautiful bar.
