    I love seeing the cheese grater type tool used to grate the tempered chocolate to use as "seed" or nuclei starter. Great idea. Thank you for posting this video!

    Understanding the crystalization process definitely gives the temperature changes more meaning.
    Kinda like a pasteurization process
