- LECHON MACAU is an easy version of the rolled lechon belly recipe. The seasonings are a bit different because this has Chinese origins while the lechon belly has Filipino origins. There are many ways to make Lechon Macau. Whatever method you follow, what is important to know is that you need to dry the skin very well to produce that super crispy crust. This recipe that I am teaching you will give you a crust that will stay crispy for as long as 6 hours if you follow the procedure faithfully and you do not cover the lechon macau after it is cooked so it will not produce steam which will soften the skin. You can not rush the cooking process so patience is the key. Good luck!

Finally , I found the recipe of this favorite dish of my son . We visit a Chinese Supermarket in Houston where this is sold by the pound, very temptingly hanging on display. Your instructions are clear , easy to follow , I'm sure I can follow to the letter that even my son can do it should craving hits him. Multiple air fryer versions flood YT , I experimented with a lot to dismal results .
This one does not work well on an air fryer. Use your conventional oven. Patience and time is the key to a successful lechon macau. Thank you for watching! Happy Holidays!
Thanks for the tip . I had a different model of air fryer . It looks like a smaller convection oven . It's great for certain dishes, for quick reheating , using it like a toaster but I quickly learned that my regular oven is the reliable one to use for my favorite baking , roasting , cooking needs . Cannot gamble when pricey ingredients are at stake.

Hi chef, good evening! I tried to cook the Pork belly but the skin are not crispy. What happen? The taste super yummy, my problem is the skin they are not crispy. I used the oven for bread. Can you teach me what to do? Thank you.
