From what I understood from a diff reaction vid, a madrigal is a group of different voices with diff melodies that come together much like what they did in the end minus the instrument so yeah it should be acapella

The sound effects that they put into the movie along with the song honestly sticks so much. In the orginal doesn't have the sound of the umberellas that make it so catchy along with Dolores's steps on the stool that leads to the ending, "do you understand?"
All the songs were composed by Lin Manuel Miranda, he is not a Disney composer so that’s why in this film all the songs are like more in a theatrical mood and not like the usually Disney song 😂 I recommend you watch the songs of Vivo, they are from Lin Manuel too

Actually, their last name, Madrigal, is also a musical term in which multiple voices overlap each other, which is seen in this song.
A true madrigal is done without music, though. If the background instruments were removed, then we'd indeed have a madrigal.
