@@ITTEA It went perfectly! There is something magical about adding the broth and when you pop the lid after 12m to see it all coming together. And as others have, I've also altered the ingredients here is what I have done so that anyone else can feel comfortable shaking things up to their liking: The first time I added a giant lobster tail in the middle of the shrimp (I just put it in around the 8m mark of the simmer) and used a seafood medley of clams, octopus, squid and muscles which I saute'ed beforehand and added with the sofrito. The second time (last night) I eliminated the lobster tail and the seafood medley and added scallops to the shrimp. No matter what you do, this recipe is simply one of the best out there for any dish you want to cook. Follow the directions and you cannot go wrong! Thanks again for posting this video and for giving us such clear instructions!

Don't forget to get a dozen of beer for yourself or small group first, for this dish only will fully satisfy all appetite. Plenty of seafood, variety of vegetables, either cool beer or cold cola, you will definitely get joyful relaxation in the times like this. I will try again in the near future. Sure you can add peas. The shrimp probably picked up some of the red from the other ingredients. Also different shrimp from different places are slightly different shades of pink anyway.
In fact chorizo should never be in paella. I wonder why people add this and call the dish paella. We add chorizo to fabada asturiana, callos and other cocido but NEVER in paella.

Everything looks burnt. It looks like you over cooked your sausage and all that black char got on the cuttlefish. I'm guessing that you had a burnt flavor permeating your paella. You need more oil in your pan, also.

I have not tried making this with jasmine rice, but certain types of rice might break down and get sticky and break down too much. For example sushi rice would be a very bad choice, but American long grain rice might stay in individual grains enough that the result might be acceptable. Rice that is less sticky and able to hold its shape better would be better choices.

After you put the cuttlefish how long until done?
The cuttlefish is already cooked from earlier so as soon as the rice is cooked you are finished at that point.

takes about an hour start to finish if you don't stop to keep fiddling with cameras :P It took us about 3-4 hours just to film it.
