Marcy you literally saved my life! I'm 73 yo and l live on a very fixed income and my snap benefits bearly cover the month. I had some chicken but that was about all, until I saw this video. I took an onion like you did but I didn't have any garlic or a can of tomatoes or beans, or even a can of corn. I took what I had, chicken, a couple of tiny cans of diced chili, I made chicken stock with bullion, luckily I did have a couple of bricks of cream cheese, and lentils. I would have only fried the two chicken breasts that I had and that's it. I made this soup even though I was missing much of the ingredients and it's the best soup I've ever tasted! I've got a big pot and when I go grocery shopping next month, I'm going to make it again! This is holding me over for now honey and I'm so grateful for you showing me this recipe!!! God bless you, and I wish you happiness in your new home.😊
72 year old... your cooking reminds me of my life in 1950's Old Mesilla, New Mexico. Beautiful, flavorful, family food. God's Blessings on you and your family.
I love white chicken chili, I played with a recipe that was on the menu at work , so I puréed half the beans used in my work recipe, made a world of difference. Creamy and thicker , I also added cream and really enjoyed the results. Thank you for sharing
Made this tonight...Had frozen "Hatch" Chilis shipped to us. This was delicious. All the seasonings perfectly balanced. And the Hatch, the star of the Soup. Thank you. It's a keeper and so are you/ your recipes..:)
You have a beautiful house! And it is freezing in Colorado that being said I'm making a green hatch Chile stew you did a video and sidenote I grabbed a jar of 505 lol
This was a wonderful recipe! It’s so delicious and perfect for our California fall. 😊😎 One thing I will add is for the cream cheese I left it out as much as possible and cut them into bite sized pieces as you recommended. The only difference I did is I put the pieces directly into the pot and used a whisk to whisk it directly into the pot, rather than scoop out some of the broth. It worked perfectly! Just wanted to add that variation I did. Thank you so much for this recipe. This will be on my list for a Christmas dish as well! Blessings to you and yours! 😊💕🙏
I live in New Mexico so I have a freezer full of Hatch green chile and I also put up some Pueblo chile. Sometimes I also get the frozen Bueno. But u can't beat that flavor of the Hatch ❤❤😊 I will make your recipe today because it is getting very cold 🥶 Thank u so much for sharing!
One year I dropped the ball( bad...) and forgot to buy green chile! So I had to buy Bueno all year and I swear by it now. Great flavor and even chop and variety on the chile. I make a version of this with pintos! Nice job!
Will have to look for Bueno or any frozen green chile . Too far away, but have been blessed by NMex migrating here so green chile roast available here now. Back in day, we all had to roast our own green chile . It was a wonderful experience. The cold September season with the smell of roasting chilies in the air. Sigh.
Yummylicious Marcy! At least one of us can cook (you, of course). Followed your directions except I made it Keto Friendly and just added cauliflower rice. I just LOVE it. Thank you Marcy😊🤩☺
Having good laugh here. I made this last week because of cold wet weather, minus the beans and corn. My son was expecting plain cream chicken and rice, but I was needing green chile. Everyone very happy ! Thank you for recipe. Will try yours soon. (Yes used my Hatch hot green I’d put up this August ). Must be the NMex coming out. Making Pesole for me tomorrow. Found your recipe tonight. Having to use canned hominy, which I’ve never used . We only had dry back in my day. ( so far back in time- you could buy corn tortillas, but you had to make homemade four because they didn’t sell them, lol. Oh and the store had big pkg of blue corn tortillas so grabbed one, for nostalgia. I live so far from NMex and getting so old, I’m losing my cooking skills ( memorized recipes), and I’m defaulting to my comfort foods. Have a blessed Thanksgiving , Marcy and husband. You’re home now, you’re first. In your new home and with family. Lord Bless you all.❤
Thank you for the outside shots so beautiful. We just got 6" of rain where I live ( Texas). I love the recipe and I will be making it today. Always have green chilis on hand the hot is my favorite. I was wondering what I was going to do with the chicken I had thawed out. Marcy, I love your videos you are very good at it So I thank you again. It is always a pleasure to watch you cook and my husband thanks you too.
Thank you for such a nice comment. That is so nice to hear. And it sounds like the timing of this recipe was perfect since you had all the ingredients on hand. Hope you enjoy it.
Okay I made the white chicken chili. I had a white chicken chili like a packet that was something you could buy it used to be so good that cannot get it any longer. So I was so happy to see your video. It's just came across so easy to make and it was. I I did use red chili powder which I would rather get the green chili powder that you had I will look for it. I don't think I've ever seen it before. And I did make one alteration which I added two cans of the Great Northern beans. It just seemed like it needed another to me more bulk. But it's delicious! Thank you for the recipe and video

The rainbow after the rain, how beautiful! Thank you for the delicious recipe. I will definitely be making it. I love that you cooked the chicken with all other ingredients, it imparts so much flavor.
Hi Irma. Glad you liked the rainbow and the recipe. That is so true about cooking the chicken this way. It's very similar to how I make chicken tortilla soup. It's an absolute favorite of ours. Hope you have a great weekend.
Good Saturday morning to you Marcy! 👋 Oh yes indeed the weather has changed. Here in Henderson, NV it is cooled down a lot, it is definitely sweater/jacket weather here! Your recipe looked so delicious and I bet really fit the bill for some good ol homemade chicken soup! 🍲 It must've smelled heavenly in your kitchen. Yum 😋 and your homemade sourdough bread 🍞 looked amazing! I got all the ingredients you used, so I guess I'm going to be making this recipe very soon! Thanks for giving us another savory and comfort choice for us to enjoy! Love the added footage of the double rainbows 🌈 that was beautiful. 🤩 Plus, I love your wooden ceiling, those beams are so beautiful and rustic, love them!! Thank you! You have fast become my favorite commenter. You are always so appreciative and thoughtful. This weekend, I drove up to Albuquerque because it was my daughter's birthday, and I got to pull out my heavy coat, boots and scarf! That's the one good thing about changing seasons. You get to see things you haven't worn in a while. I also put on my warm pajamas for the first time last night, and all I can say is, someone shrunk them because they were definitely not that tight last year! lol Hope you're having a wonderful weekend. Looks delicious!!! I like the idea of the cream cheese. I'm going to make this. We slice up corn tortillas into strips, toss some olive oil on them and paprika, and bake in the oven slowly. They are great on soups. Can't wait to make your soup!
That sounds wonderful. I'm sure they crisp up nicely and are healthier than deep frying that way. I'll have to try it. Thanks for the tip and for watching.
My husband and I both liked it. I was afraid the Hot might be too hot, but my husband and I both thought it was the perfect amount of heat. I will definitely buy it again, when the chile in my freezer runs low.
That looks so good especially your homemade sourdough! There’s a place here in Albuquerque “Cheese and Coffee” with a really good green chile chicken soup and they also have a hot turkey grilled sandwich with swiss, green chile and avocado on sourdough bread whenever you come north give it a try!
@@marcyinspired1442 I made it earlier today and it is great! I drained the corn and toasted it in a cast iron skillet and with my kitchen torch to up the flavor a little - I recommend doing this step.
Thanks for the comment. I've been making sourdough pretty much every week since my friend taught me the basics about a year and a half ago. Here's the video I shared called, "Sourdough for Beginners." th-cam.com/video/cI0kAgqT12o/w-d-xo.htmlsi=-4jAsKcfxM8UBFnk But maybe I'll share another video in the future.
Hi Marcy. I t have everything but the cream cheese can something else be used? It looks good. Love the new home. Looks like a great location. I am sure different than Arizona. I have lived in Yuma and got used to the sun all the time coming from CA, but now I am in NC weather charges on a dine. We have to dress in layers. Lol look forward to trying your recipe. I used the chili sauce last week for Enchiladas. Loved it. Used taco seasoning because I ran out of chili powder, bit it was good. Blessings.
Glad to see someone was able to help answer your question. Sour cream is a great substitute, as is heavy cream. You can even add a Tablespoon of flour when you're sautéing the onions, and it will thicken your broth similar to the enchilada sauce you made. Then you could add a little shredded cheese to melt into it at the end. I hope you enjoy this recipe. Thanks so much for watching!
Yummy! I’ll have leave out the sour creme (can’t have dairy) so I’ll use more of the other ingredients (esp the chiles). You rock, Marcy 👍🏻 EDIT: If you have a Trader Joes, they sell roasted corn in the freezer section. I use it in your green chile stew.
Thanks for the tip about roasted corn at Trader Joes. Unfortunately, we don't have one in Las Cruces, but I do visit Albuquerque regularly and they have one there. Since you can't have dairy, you can also add a Tablespoon of flour when you're sautéing the onions, and that will thicken your broth. But it should be good either way.
I do like Bueno frozen green chile, but I often find lots of stems and seed veins in the chile. The other day, I think I picked out about four stems. The soup looks fantastic!
Can't wait to try it Marci. Have a quick question. When you had the onions ready on the cutting board did they have some celery mixed in with them as it looked like there was something green mixed in with the onion and if not could you add a stock or two of chopped celery. I can't wait to try this as White Chicken Chili is my New Favorite chili. Love your channel and so happy you are move and settled in and back on air with us.😊
That was just the color of my onion. It had a lot of green in it. I never add celery to any of my chilis, but the beauty of cooking for yourself is you can add whatever you like. In fact, I hate when people say, "you're never supposed to add such and such..." I say, "if you like it, try it." Thanks so much for watching.
@marcyinspired1442 Thank You so much for your wonderful recipes and always your quick response to any questions. What is the name of the jar of hatch chili's again and in what part of the store would they be in. I live in North Florida
I make sourdough bread every week, but don't think of sharing it because not everyone has sourdough starter at home. But maybe I can still share that in the future.
I use Bueno often for the convenience. You might really check where 505 comes from. If you really want certified Hatch., use 575 which is based out of Las Cruces.
My husband and I both really liked the Bueno chile, so it's good to have something else to recommend. I have yet to try 575, but I've been meaning to do that. I saw someone share a video comparing 505 & 575, but it was misleading because they compared the 505 "salsa" to the 575 chopped chile and tried to show that 505 was runny. That bothered me because it wasn't an honest review.
Love that soup, must try. Sourdough? Do tell. I’ve received some 100 year old starter(from Paris) from my sister. I hope I can do it justice. Have you done many recipes with sourdough?
I am absolutely addicted to making sourdough everything. Ever since my friend gave me some of her starter about a year and a half ago, I've kept it going and make something with it every week. I've made bagels, pancakes, pizza dough, English muffins, banana bread, and of course, just plain ol' sourdough bread with it. It is so much fun, and so good for you, too, as the fermenting process makes it much easier for our stomachs to digest. Here's a link to the video called "Sourdough for Beginners," where my friend shares all the basics. th-cam.com/video/cI0kAgqT12o/w-d-xo.htmlsi=-4jAsKcfxM8UBFnk How cool that your starter is 100 years old and from Paris! Once you get it going, there's tons of recipes online where you can use sourdough discard. The trick is to use as much of it as you can so you don't have to feed it as much.
Shabbat Shalom! That's so funny that you say that. Tony is super disciplined because he has to stay fit for work. I'm the one that struggles in that department. lol
You need to change the title to CHILE, because the moment you add Hatch or Bueno from New Mexico Green, it becomes Chile. Chili is blasphemy and is the typical wolf brand pure bean and meat chili.

Thank you. 🇺🇸🇲🇽
Thank YOU for watching!
My hen just ran through the kitchen....something about the sky falling...however , thanks for another great recipe!
Sorry great soup... 😋 I was seeing blury 🍻🍺🍺🍻🍺🤗🎉❤
Too funny!
We need a video of you making the sourdough bread
I do also use 505 that I get from Sams, it is just like you said about Bueno, not necessarily from Hatch.
@ thank you for that link. I will watch. Just this week I took some discard and added it to a chicken stew to thicken it up a bit. Delicious!
Shabbat Shalom Marcie! How is Tony not the fattest man 🧍♂️ in the world 🌎!! God bless from Southern Utah.
Blaze
Shabbat Shalom! That's so funny that you say that. Tony is super disciplined because he has to stay fit for work. I'm the one that struggles in that department. lol
Is the cream cheese for flavor or to thicken it?
How many will this feed?
I miss seeing your scripture board.
YUM!!!... It just needs a little more bacon. 😜
I add 8oz of pepper jack,,, ;o)
I LOVE pepper jack. That would be perfect on this soup.
No ma’am that’s to watery & the chicken should have been cooked in a separate pot
You need to change the title to CHILE, because the moment you add Hatch or Bueno from New Mexico Green, it becomes Chile. Chili is blasphemy and is the typical wolf brand pure bean and meat chili.
I don't care for the Bueno brand they put way to much skin in it for me
