    Night before: Slather in olive oil, bake for 30 mins 375, let cool. Cut, seed and cube much softer and easier 😊

    To desolve the gelitine, put it in a cup with just a little water to cover the gelitine. Give it a little stir and let it sit for 5 min for the gelitine to "bloom" and become spongy. Then microwave it 10 or 20 seconds to melt. Then pour that into your hot liquid and stir. Vwala! 😁

    I think the faux sweet potatoes casserole. Needed little heavy cream and a egg or two. Here in the South, we would call it a souffle

    I wonder if you could cook the squash in the oven BEFORE trying to cut it. That's how I cook Spaghetti Squash, WHOLE, no cutting until after done, makes it MUCH EASIER! Hope this helps! Hello from N.E. Texas!

    I do not peel the skin off. I use my new pressure cooker set on steam vegetables for 8-10 minutes. Wow is it sweet and soft enough to eat. I watch your channel for its entertainment value. Thanks for being transparent about your collective process.

    I am a lazy cook. I make the cranberry sauce with sweetener, orange juice, orange zest and then cook cranberries but don't "jell" it. I have also cooked the berries and mixed it in strawberry Jell-O. My husband wouldn't eat cauliflower (although I love it) so I would just cube the squash bake it, smush it with a fork after adding butter, sweetener, and cinnamon or pumpkin pie spice, then top it with the nuts and bake it until crispy. It's nice to see other methods of making these traditional Thanksgiving dishes and I'm sure I'll use them at some point. This is the second time I've watched this video. Thanks for doing this.

    Microwave tithe squash before you peel for a 1-2 minutes it will make it easier to peel.

    I never have liked Cranberry sauce, but I know you just made a lot of keto people happy by sharing that recipe. I am also of the unpopular opinion that sweet potatoes taste best with butter and black pepper. Turning them into a sweet dessert never really did make sense to me. I know it's delicious, but I'd rather have it plain. I do love the idea of using the butternut squash as a substitute and the cauliflower would disappear with all that flavor.

    You did an amazing job of peeling that Butternut squash, well done, I find it so hard to peel that I leave the skin on and roast it, and then when it's cooked remove the skin, it's so much easier, when it's cooked. That casserole looked brilliant, I am even considering copying it, thanks for sharing. You did great with the cranberry jelly too, well done, showing us that it is so easy to get into a lumpy mess with gelatine. I loved Sarah's comment, we make mistakes so you don't have to, keep up the great work ladies.

    As others have said, there is no need to cut or peel the squash. I place a squash (butternut, pumpkin, acorn, etc. ) on a silicone or foil lined baking sheet, poke with a knife a few times then roast at 350° for about an hour or until soft. Let cool, cut open (the skin is very soft at this point) scoop out seeds, then scoop out soft flesh and purée. Super simple! For pumpkin, I also clean the seeds off, soak in salt water overnight, drain, then roast until fully dry. Eat shell and all. So yummy! Going to be trying both of these for Thanksgiving!

    Hey sweetie, I make my Keto sweet potato casserole using butternut that’s been in a steamer. The peeling falls off of it and you don’t have to blend it very much at all. Get yourself a sunbeam rice and vegetable steamer! Or any veggie steamer! I steam my veggies and then do what needs to be done with them. If you want to just lightly steam veggies then sautéed them it cuts down the sauté time. Just a thought.

    Love your recipes! I started using a triangle peeler and it's way easier as you can lay the squash on its side and peel away much faster .

    Butternut squash and cauliflower! Baked first what a great idea ! And I don’t mind chunky!
    The cranberry recipe sounds good. I’ve been trying to make cranberry sauce also.
    I am familiar with gelatin which is dissolved first in cold water (unless the Brand packet of Jell-O )All water could of been.
    I will try both of these! Thanks!

    Butternut squash soup.... cut squash in half roast for 1 hour seasoned with cinnamon , let cool saute a small white onion in soup pot add chicken stock then add squash and blend with stick blender season to taste. you can add a half cup of heavy cream if you think it needs it

    Actually best to bloom gelatin in a little bit of room temp water and add it to the hot stuff so it doesn't clump.

    If you score the skin of the squash in a few places then steam it in a covered pan with a few cups of water for about ten minutes. Take out let cool for about five min the skin will pull off then you can cut and remove seeds much easier.

    I cook my spaghetti squash whole in the microwave after repeatedly stabbing it. You can then slice it open without amputating anything. I wonder if it would also apply to butternut as well.

    I would mold the cranberry sauce in an empty can, even if I had to buy the bad kind and throw it out. My family would not eat it if it was not shaped like a can! Lol😂

    Yum!!! I will totally make this. Do you think it would be good without the cauliflower- just looking to make it easier. Also when mixing something messy, place in sink and mix it. I do that when I pound pomegranate seeds out of their shells.

    That looks delicious! Safe your fingers and use canned pumpkin puree. Hey, pumpkin is in the squash family. Please don't take on peeling, cutting, or slicing celery root. I don't think it will end well.

    I was kind of craving potato pancakes.
    So I came up with a recipe that turned out pretty good. Love for you guys to try it and tell me what you think.
    First take 2/3 cup of sauerkraut and dry it off.
    Then take roughly two slices of a small onion. And throw into a food processor. Let it finally chop it. Now add in the sauerkraut and chop it again.
    Then add two tablespoons of quinoa flour
    One teaspoon of French onion seasoning
    One teaspoon of psyllium husk.
    1/8 cup of yellow cheddar cheese
    1/8 cup of mozzarella.
    And blend again
    Pour into a bowl and add one jumbo egg.
    Mixed with a fork.
    This should be enough for three chaffles.
    Once waffle makers ready put down a little cheddar cheese. And then your mixture topped with some more cheddar cheese.
    Also with my sour cream I put some ranch season in it.
    I think I'm going to actually try to do it in oil like you do traditional potato pancakes

    I hate cutting squash, because they are so hard to cut. I'm always weary of slicing off my finger. What I do is to use the claw side of a hammer and break a squash in half. That makes cutting a little more easier after they have been broken into several pieces. I saw a video of a TH-cam cook cutting a squash on a plate on top of a slick counter. That scared the heck out of me, and I hoped her viewers don't do the same thing.

    Question. So why not pumpkin from a can instead of butternut squash just to make it easier. Butternut is more carbi I think than some of the other squashes. So How can we make it less pumpkin tasting? Maybe mix with ground zucchini? That wouldn't be creamy. Thoughts?

    The sweet potato casserole looks delicious. I could never throw away the fruit from the cranberry jelly though. I would definitely serve it as a chunky cranberry sauce. By the way, when you make mistakes you are much more "normal" to your audience. I mess up all the time!

    Could see being low carb friendly but keto? Sweet potatoes tend be 21 net carbs per .

    Ok, just a thought. Do you think using butternut squash baby food would work? I am NOT very strong, and watching you slice up that squash made me cringe! But the babyfood is 1/3 cup and with 6 of those little servings (2 cups-and I know it’s really watery), plus caulirice dry-fried and pureed with it? I have ALWAYS been the sweet potato casserole person in my family, it has always been my job to make and bring. I have to do it, I just do, but this time it is going to be keto, and I’m not saying anything to anyone unless they ask. The babyfood would equal to about the same as the actual squash in price I think, bc 2 squashes would be over $7 and three packages (2 cups) of the babyfood is a little over $6. Or, do you think I could bake the squash whole for a while to make it easier to cut? What do you think? Babyfood makes a terrific alternative to lots of things but not sure it’s always going to be as economical.

      Butternut squash has a decent amount of carbs, but adding in half cauliflower helps bring that carb count down to around 5 net carbs a serving -Emily

    Oh my goodness that casserole looks soooooo good. I think the cranberry jelly might have worked better if you left the cranberries in and mixed it with an immersion blender.

    I would have stabbed the butternut squash with a knife and roasted it in the oven on 200 until soft usually over night that's what I do with my garden pumpkin the seeds and peel just fall off or are able to scoop away

    Rewatching this for, like, the gazillionth time (I rewatch MOST of y’all’s videos), I remember something that I noticed years ago: the music at the beginning of this one, and has been in others, reminds me of the music from the video game “Luigi’s Mansion”; our son used to play that many years ago, and even he thought that this music is reminiscent of the game-good memories!

    If you put gelatin in the cranberry sauce you have to soften it with cold water and then add it 2 what you're trying to thicken up

    No need for the Gelatin. Cranberry have natural pectin. Recipe on ocean spray bag. Use sugar substitute. I add Grated orange skin. No straining necessary. It's whole Cranberry sauce and delicious.

    Wondering if baking the Squash a bit first, then scooping out the seeds and the squash, might be easier??? Just a thought.

    I made this keto sweet potato casserole last Christmas and let me say ... it is excellent! It tastes exactly like sweet potato casserole should taste! That's my favorite casserole at the holidays and I had missed it, but I was so freaking happy when I tasted this I cannot believe that butternut squash and mashed cauliflower together would taste like sweet potato but they do! Absolutely one of my favorite holiday keto recipes ever!!! ❤️ ❤️ ❤️. ( to make it easier, I just buy cubed raw butternut squash from Trader Joe's... so much easier than getting the whole thing and doing it yourself) 😃😃😃

    I know this is an older video but I had to tell you how much I enjoyed it. Y'all are so fun. Tip: when you cut up larger squash like butternut or spaghetti if you put the whole squash in the microwave for 5 to 10 min it makes it so much easier to cut.

    I find butternut squash is easier to peel if I slice it first and then peel the slices with a knife.

    With jello you mix it in hot liquid until it dissolves and then you add the 2 cups of cold water, stir and pour into mold.. 💋🧚🏻‍♀️❤️🇺🇸

    I no longer have the source, but I read that you could soften butternut squash before cutting by putting in the microwave for a few minutes. Guess I will be experimenting when I do this recipe because I am awful with knives and risk cutting off a finger! This all looks so good! Thank you for making keto an option for those of us who just can't be hard core! 😊

    OK so I just have to stop what I’m doing it is Thanksgiving day you girls are saving me I made the butternut squash I didn’t have the pecans but I had a bag of keto clusters, Which is pecans almonds and pumpkin seeds, Melted butter put through the food processor sprinkle them on top… Oh my god it’s so good it taste like pumpkin pie

    Butternut squash is easier to peel if you remove the ends and quarter it. I’m going to try it with the extra tips from the comments.
