The red-velvet cake recipe literally calls for an ENTIRE bottle of red food coloring! Personally, what makes it velvet is the addition of vinegar. As another commenter stated, the vinegar is acidic and acts with the baking soda (base) to create the leavening by created gas. However, another function of the vinegar is to interact with the milk to give a buttermilk effect. Red velvet cake is my absolute favorite!! You guys did great!! 🎂
It takes a LOT of red food colouring in a red velvet cake to make it “red”. Made so many. I use beet juice from canned unsweetened beets. And sometimes I use a couple of beets very well puréed in my batter. Helps with the red, and gives moisture to the cake. Being a cake decorator, I’ve never attempted to “bake” in my waffle iron. Sounds intriguing. I might try just for fun. Glad you finally found a solution 🥰 Wasn’t a fail, cake looks and sounds delicious.

Just double it if you want a 4- layer cake. 2 Oz cream cheese 1 whole egg 1 TBS ALMOND Flour 1 tsp coconut flour 1 tsp vanilla 1 TBS monkfruit Blend everything together, then use batter to make 2 waffles. I'm sure you could adjust it with cocoa powder or another Flavoring. I just use this whenever I want a sweet, cakey waffle- like- treat! 😊❤

I made this cake for my husband’s birthday yesterday. Only difference is I added one puréed beet + juice, and less almond milk. Took cake a bit longer to bake because of the addition. Was so good, and my non keto family loved it too. Definitely a keeper.

Keto versions of things usually taste way BETTER than the original versions!! The high fat content lets you make food that is rich, creamy and super-satisfying!! Because there aren't a lot of pre-made keto stuff in stores, it is essential to buy ingredients and make stuff yourself!! For instance...check out 90sec microwave bread!! 1 tbsp melted butter 3 tbsp almond flour 1 egg 1/4 tsp baking powder Pinch of salt... Melt butter in small round glass dish(about 5"-6" diameter is good) Mix in the other ingredients and cook for 90 sec on high in microwave. Let cool slightly, remove from dish, slice in half, butter and fry lightly in frying pan. Use for sandwiches or base for pizza ingredients, or eat with butter and sugar-free maple syrup!! Try this and you will think you have died and gone to heaven...so yummy!!!

Red velvet cake actually goes back to the 1860s. The red color come from the reddish color of unprocessed cocoa. It used baking soda and the acid in buttermilk for levening, and red sugar beets as all or part of the sweetness. This is why some modern recipes include apple sauce in place of the beet puree. This was great. I love the idea

I recently made a cake like waffle with /out of keto chow core chocolate flavor and used cream cheese for icing. Also I used alulose for sweetner...You Know allulose may be the answer . It is sugar with antisugar properties. Maybe the "sugar " is needed for the recipe.
Historically it is suggested that the red tint came from non Dutch cocoa (unprocessed cocoa) and vinegar & baking soda/buttermilk & baking soda reacting But using actual beets should offer the red color and offer moisture to make the cake soft. Now I want to see where this rabbit hole will take me
so looked it up and 1/2 of canned in water beets have 4 net carbs... if you pureed even half that in the almond milk you should have a nice red color just a thought..
this maybe in the moments.. BuT.. I believe you have to put the WHOLE bottle of coloring in the cake mix.. which we KNOW .now. . would not probably be a healthy thing.. so the color you came out with is perfect.. beautiful job.

Um, for those - like me - who don't have a mixer stand, I found that by putting your bowl in the kitchen sink, and positioning your mixer on the countertop, you get the same effect. My bowl even turns around in the sink!! I am definitely going to try out this recipe 🥞

Well, I have thaat same silicone mold, and haven't yet gotten a Dash. So thanks for the great Keto cake recipe! (and let's be honest - the mold IS a lot easier to clean than a waffle maker)

Be glad you didn’t put a lot of red coloring in the batter. Did you taste a bit of the red color right from the bottle? Most red coloring tastes yucky. I know the high carb original version of red velvet cake often called for a whole small bottle of red. I bet it tastes better without any. I’m glad they looked and tasted good after baking.
When I make waffles in my waffle maker, they usually take a few minutes to cook. Since this is a cake base, I would think that it would take a bit longer. Also, I wouldn’t use a hand/stand mixer to mix it because you can over-mix cake batter.

Btw check the ingredients of your natural red dye, it could be beet powder or cochineal (red bugs). I’m always suspicious of anything with ‘natural red dye’ and I put it back on the shelf. Loll
Just a quick comment about food colouring…. Those typical liquid drops you find in the grocery store are very weak and really only meant to achieve pastel colours…. If you want more intense colour, you can buy food colouring in gel or even dry powder form, and a little goes a long way with those… 😉

I think you have to use a cocoa powder that is more acidic than normal to react with the vinegar for a more red color. But it doesn’t need to be red to taste great.
I love Red Velvet cake (only with original Ermine frosting) and would ask my Mom to make every year (65+) for my birthday. I do not like chocolate cake at all. The difference between a red velvet cake and a chocolate cake is the amount of chocolate used in the recipe. Red velvet cake uses a couple tablespoons of cocoa powder whereas chocolate cake is much more chocolatey. White vinegar actually plays a crucial role in red velvet cake as it activates the baking soda making the cake super light and fizzy. Original Red Velvet topped with Ermine Frosting. Ermine frosting is made by cooking flour and milk until it becomes a thick paste or roux. I love girls and your humor. Thanks for trying first for us. Any ideas for Ketofying Ermine frosting with flour other than almond (allergy) please let me know.
Yes, exactly. People just don't understand the science behind a true red velvet cake. They put way too much cocoa in it and now they are adding coffee to bring out the chocolate. 😂. Just make a chocolate cake 😂😂😂 I am working on a keto Ermine. Not quite there yet😊

Red food coloring is just not a good thing to ingest. That’s why it’s banned in other countries. I’ll stick to a brown, chocolate velvet cake.

In a regular red velvet cake recipe, you add an entire bottle of red coloring. You still made a wonderful little cake. Don't despair.

The oven version looks like a cake, the Dash, not so much. I am going to try this.
In my regular res velvet cake,it calls for 3 tbps. Coco and 2 fl.ozs of red food color. Mix together before adding to batter.

They're using almond flour, therefore, there's no gluten to overmix.

I think you have to use a cocoa powder that is more acidic than normal to react with the vinegar for a more red color. But it doesn’t need to be red to taste great.

I love Red Velvet cake (only with original Ermine frosting) and would ask my Mom to make every year (65+) for my birthday. I do not like chocolate cake at all.
The difference between a red velvet cake and a chocolate cake is the amount of chocolate used in the recipe. Red velvet cake uses a couple tablespoons of cocoa powder whereas chocolate cake is much more chocolatey.

Yes, exactly. People just don't understand the science behind a true red velvet cake. They put way too much cocoa in it and now they are adding coffee to bring out the chocolate. 😂. Just make a chocolate cake 😂😂😂
