Hey Buddies! Today we’re making Meat Pie, sit down, relax and enjoy! Ingredients: For the pastry: • 500g all-purpose flour • 250g cold butter (cubed) • 1 tsp salt • 1 egg (for egg wash) • Cold water (about 1/4 cup) For The Filling: • 250g minced beef • 2 medium potatoes (diced) • 1 carrot (diced) • 1 spring onion (chopped) • 1 bell pepper or paprika (chopped) • 1 small onion (chopped) • 1 tablespoon vegetable oil • 1 tablespoon flour (for thickening) • 1/4 cup water (or meat stock) • Salt and Red Pepper flakes (to taste) • Cameroon Pepper (optional, to taste) Instructions: 1. Prepare the Pastry: • In a large bowl, mix the flour and salt. • Add the cold butter cubes and rub into the flour until it resembles breadcrumbs. • Gradually add cold water, a little at a time, mixing until the dough comes together. Knead briefly to form a smooth dough. • Wrap the dough in cling film and chill in the fridge for at least 30 minutes. 2. Prepare the Filling: • Heat the vegetable oil in a pan over medium heat. • Add the onions, spring onion, bell pepper (or paprika), potatoes, and carrots, and cook for a few minutes. • Add the minced beef and cook until browned • Stir in the flour and cook for another minute. • Add the beef stock and simmer until the filling thickens and the vegetables are tender. Season with salt, pepper, thyme, and curry powder. • Let the filling cool. 3. Assemble the Meat Pies: • Preheat the oven to 180°C (350°F). • Roll out the dough on a floured surface to about 1/4 inch thickness. Cut out circles using a round cutter or the rim of a bowl. • Place a spoonful of the filling in the center of each circle. • Fold the dough over to form a semi-circle and press the edges with a fork to seal. • Place the pies on a baking tray lined with parchment paper. • Beat the egg and brush the tops of the pies with it for a golden finish. 4. Bake: • Bake in the preheated oven for 15-20 minutes, or until golden brown. Enjoy your meat pies!
