Best Akara Recipe - How to Make Nigerian Akara (Bean Cakes)
Hey Buddies!
How To Make Akara
Ingredients:
• 1 cup black-eyed peas (peeled)
• 1 small onion, chopped
• 1 small bell pepper, chopped
• 1 scotch bonnet or habanero (OPTIONAL for spice)
• Salt, to taste
• Oil, for frying
Instructions:
1. Soak and Peel: Soak beans for 15-30 minutes, rub to peel skins, and rinse.
2. Blend: Blend beans, onion, peppers, and a bit of water until smooth and thick.
3. Whip and Season: Add salt and whisk the batter to add air (makes it fluffy).
4. Fry: Heat oil, scoop batter into hot oil, and fry until golden brown (2-3 mins per side).
5. Drain: Remove, drain on paper towel, and serve warm.
Tips for Perfect Akara:
• Use cold water sparingly: When blending, only add a small amount of cold water to help the beans blend smoothly. Too much water will make the batter runny, affecting the texture.
• Whip air into the batter: Whisking the batter incorporates air, which makes the akara fluffy and light.
• Avoid overcrowding the pan: Fry in small batches so that the temperature of the oil doesn't drop too much, ensuring the akara cooks evenly and crisps up well.
• Keep the oil at medium heat: Too hot, and the akara will burn on the outside while remaining raw inside; too low, and they'll absorb more oil and be greasy.

Hey Buddies! Today we’re making Meat Pie, sit down, relax and enjoy! Ingredients: For the pastry: • 500g all-purpose flour • 250g cold butter (cubed) • 1 tsp salt • 1 egg (for egg wash) • Cold water (about 1/4 cup) For The Filling: • 250g minced beef • 2 medium potatoes (diced) • 1 carrot (diced) • 1 spring onion (chopped) • 1 bell pepper or paprika (chopped) • 1 small onion (chopped) • 1 tablespoon vegetable oil • 1 tablespoon flour (for thickening) • 1/4 cup water (or meat stock) • Salt and Red Pepper flakes (to taste) • Cameroon Pepper (optional, to taste) Instructions: 1. Prepare the Pastry: • In a large bowl, mix the flour and salt. • Add the cold butter cubes and rub into the flour until it resembles breadcrumbs. • Gradually add cold water, a little at a time, mixing until the dough comes together. Knead briefly to form a smooth dough. • Wrap the dough in cling film and chill in the fridge for at least 30 minutes. 2. Prepare the Filling: • Heat the vegetable oil in a pan over medium heat. • Add the onions, spring onion, bell pepper (or paprika), potatoes, and carrots, and cook for a few minutes. • Add the minced beef and cook until browned • Stir in the flour and cook for another minute. • Add the beef stock and simmer until the filling thickens and the vegetables are tender. Season with salt, pepper, thyme, and curry powder. • Let the filling cool. 3. Assemble the Meat Pies: • Preheat the oven to 180°C (350°F). • Roll out the dough on a floured surface to about 1/4 inch thickness. Cut out circles using a round cutter or the rim of a bowl. • Place a spoonful of the filling in the center of each circle. • Fold the dough over to form a semi-circle and press the edges with a fork to seal. • Place the pies on a baking tray lined with parchment paper. • Beat the egg and brush the tops of the pies with it for a golden finish. 4. Bake: • Bake in the preheated oven for 15-20 minutes, or until golden brown. Enjoy your meat pies!

@@LidiaBrito-w2e Hello, I keep this in my fridge, but if you want to freeze, don’t juice but rather blend and transfer to your ice tray, freeze and store in your ziplock bag in the freezer, all you need to do is add your cubes to a cup, hot water & enjoy. If you would like me to film a video, please let me know. 😊😊
