  • Naan bread
    Ingredients
    - 2 1/4 cups all-purpose flour
    - 1 tsp sugar
    - 1/2 cup warm water
    - 7g tsp active dry yeast
    - 3 heaped tbsp plain yoghurt
    - 1/2 tsp salt
    - 1 tbsp oil
    - Some oil for greasing the skillet
    - 3 tbsp melted butter
    - 2 cloves of garlic, crushed
    - Small handful of coriander, sliced thin
    Method
    1. Start by mixing together the flour, sugar, water, yeast, salt, yoghurt, and a drizzle of olive oil in a mixing bowl.
    2. Once the dough has started to form into a ball, turn it out onto a floured surface and knead for 10 minutes or until it's smooth.
    3. Place it back into a greased bowl and cover with a tea towel for 30 minutes, or until it has doubled in size.
    4. Remove the dough from the bowl and onto an oiled bench. Cut the dough into 8 even pieces.
    5. Roll the 8 pieces into tight, smooth balls before rolling them out with a rolling pin.
    6. On one side, place some garlic and coriander before flipping it and rolling out once more so it embeds.
    7. Cook the naan in one of the three ways shown in the video, and as soon as they're cooked, brush with some melted butter.

    A really good method I use that does involve a bit more attention is to wet one side of the naan and place that side into a ripping hot cast iron pan, cook for about 1-2 mins or until bubbles start to form, and then (using oven gloves for safety) flip the pan upside down and hold it directly over the flames of the stove, (the water prevents the naan from falling) and hold it there for a 30 secs to a minute and the naan will develop these nice crispy leopard spots. (note this only works with gas/flame stove).

    You forgot the fourth most common method we use in India... Hot flat pan on a cookstove .. 2 minutes on each side

    Naan in a pizza oven will be the closest to Naan made in Tandoor or clay oven,Awesome chef, his passion for cooking is unparallel

    I've found that just a hot pan on the stovetop with a little butter works very well for making flatbreads

      I made it using this method.but the best is a cast iron pan since it will get hotter and hold the heat

      I heat 2 cast iron pans & use 1 for the Naan and the other upside down on the first one to create an oven. Works for me.

    I love Andy....But he's also figured out a formula... Idk whether he loves Indian food as much as he likes making it. But everytime he does such an incredible job with Indian food and hordes of loving Indians flock to his video and like and comment and susbcribe and make the channel grow exponentially. Good formula to make one of the largest populations so happy with your content and skills

    Great recipe! Having test all 3 methods, here’s my 2 cents : nothing beats the screaming hot pan the stove. 1-2 min on each side… beautiful char and always create 2 layers. Lower temp methods tend to make it a single layer imho

    There's another technique we use in India where we place the nan on the back side of a cauldron\kadai. And it's a very effective technique for those who use a gas stove .

    Try splashing little water on one side of the naan and then put the naan on hot cast iron pan (wet side down). This will make the naan stick to the pan. Cook it for 1-2 minutes and then flip the tawa, exposing the naan directly to the flame. This brings results very close to the tandoor method and the naan comes out (un-sticks) easily once it's cooked. Spread some butter before serving.

    The best way to make naan is to firstly use baking powder as the raising agent - no yeast. Secondly, use sugar at 10% of your flour amount. Naan is best quite sweet - Kalonji (nigella) seeds are also essential IMO. Thirdly, leave the dough at room temp several hours or overnight in the fridge to allow the flour to become fully hydrated and for gluten development - make sure the dough is room temperature before cooking. Finally if you have a gas hob get a cheap carbon steel tawa for cooking and flip the tawa over so the naan is directly over the gas - this is the closest to a tandoor you can get at home. If you can't get hold of a tawa then a frying pan or bottom of a wok can work.

    I use a cast iron pan, hot as hell with a little bit of geeh, put the dough on, lit on, heat reduction to half so the pan stays hot, when I see bubbles flip an finish for some minutes.

    A lot of takeaway places in the UK that do Indian food bit also kebabs, pizzas, burgers etc , will cook their naans in pizza ovens. Only proper Indian restaurants will usually have a Tandori.

    I follow a trend set by Julia child's. I have 6 fire bricks in my oven that I cook my pita/naan/pizza on and it really works well.

    Wow that looks so good also first haha I made your vol au vent for dinner and it was delicious! I used potatoes instead of chicken because my bf is a vegetarian and it turned out great! Oh and for this recipe would a pizza stone in a oven be good?

    You can actually make it on a tawa or a pan on which it can stick a little

    Another method- heat a shallow tawa or pan on stove very hot, spread water on the on the bottom of naan (the side that doesn’t have topping), put naan on tawa and stick it to the tawa by pressing down gently with your finger tips, cook till you see bubbles, flip the entire pan so the garlic side is facing open flame and cook for 2 minutes, turn remove the naan apply butter. This will give you a perfect Indian style naan with crispy bubbly texture.

    Tandoor means oven in persian,so yes,you technically cooked it in a "tandoor" in the third method 😂

    I have a weird thing about texture. Dough physically makes me grind my teeth, like nails on a chalkboard. It's an issue with Paper and cardboard as well.
    Is there a way to make it without losing my mind? I've tried gloves but it only helps a tiny bit. Can I oil the dough without it bothering the rising and baking process?

    Hey Andy, you have to give Indian scrambled eggs a go. This has got to be one of my all-time favorite breakfasts. With chapati, it's the best! Not something you can get in an Indian restaurant as it is only really a breakfast dish. ENJOY!

    I did mine in a ripping hot (smoking) cast-iron skillet with no oil. Also comes out very nice and you only need 30 seconds or less per side. I don't have a pizza oven or a nice flat surface on my BBQ, so this is the best option for me.
