PIZZA with freshly milled flour crust • cast iron pizza

- We are big fans of pizza on Friday nights! I adapted our favorite recipe (thanks, mom-in-law!) to freshly milled flour for a nutrition and flavor boost. You can also make this with all purpose flour--I've done it countless times!

Recipe--yields 2 pizzas:
2 Tbsp yeast
2 cups warm water
2 tsp sugar
2 tsp salt
4 Tbsp oil
4-6 cups flour (I use hard red wheat; all purpose also works)
Pizza sauce
Cheese
Toppings
Mix the yeast and warm water; sit aside. Add the sugar, salt, and oil to your mixer or mixing bowl (this recipe can be made in your mixer or by hand). Stir in one cup of flour at a time until the dough can be kneaded without sticking to your hands or the bowl. Knead well. The dough should be smooth. Cover your dough and let it rise for 15 minutes.
Preheat your oven and cast iron skillets or pizza pans to 425°F.
Divide the dough into two parts.
When the oven and pans are hot, remove them and coat with oil. Add and shape your pizza dough. Bake the crust for 10 minutes. Remove the pans from the oven and add your sauce, cheese, and toppings. Return the pans to the oven for another 5-10 minutes or until the cheese is melted and the crust is brown. Optionally, you can use the broiler to brown and melt the cheese.

I hope that you enjoyed your pizza! You can use hard white for pizza crust, but I like the density and flavor of hard red better when it comes to pizza. :)

Great recipe. Just received my soft white wheat berries and I’m going to try your recipe. Just received my Nutrimill Classic yesterday so anxious to try something, lol! Very, very new to milling my own flour and hope to never have to purchase flour again but time will tell.
I only buy all purpose flour to feed my sourdough starter. Otherwise, all of my family's baked goods are made with freshly milled whole grains. One day at a time and one recipe at a time--you'll get the hang of it!

I tried this recipe, and it was delicious! The only thing is the pizza was crumbly like breaking apart, we had to eat it with forks. Any idea what the reason would be?

I'm so glad you liked it! The Mockmill is loud, but any mill would be. I like how uniformly it grinds my wheat & it's so handy on my countertop. 😊
Hi Rachel! I am loving your videos and meal ideas and recipes! I am trying to decide which grain mill to get. Question, does the mockmill produce a lot of flour "dust" into the air as it is milling?

Thank you so much for your kind words! Yes and no. I find that the bowl into which I mill makes a difference in the dust production: plastic bowls make more dust and glass bowls make less dust (due to static, I imagine). It also changes depending on the season. For me, the summer months are quite humid and that causes the flour to fall right in my bowl. In the winter, I cover my mill with a towel to make sure the flour doesn't float away. I'm guessing these are struggles of all mills. I don't mind using a towel. :) I hope you love whichever mill you choose!
