PANTRY CHALLENGE week 4 • sourdough pizza • freshly milled cornbread • cream cheese chicken chili
Welcome back to week 4 of the pantry challenge--the month (or 2) that I avoid the grocery store and only cook from the food that I have stored at home. We ate WELL this week. Watch along as I make a taco casserole that doubles as a freezer meal, lasagna, cream cheese chicken chili with freshly milled cornbread, and sourdough pizza with freshly milled flour. YUM!

1 can corn
1 can black beans
1 can diced or Rotel tomatoes
1 c cooked rice
1 c salsa
1 c sour cream
1 c shredded cheese
Any cooked meat
*Mix all ingredients and place in a 9x13 baking dish. Top with more cheese.
*Bake at 350 for about 45 minutes or until heated through.
I made lots of edits to this recipe, but you really can't go wrong!
Cream Cheese Chicken Chili
2 chicken breasts
1 can diced or Rotel tomatoes
1 can corn
1 can black beans
1 package ranch dressing mix (I added my own seasoning to add this flavor)
1 Tbsp cumin
1 tsp chili powder
1 tsp onion powder
1 block (8 oz) cream cheese
*Put the chicken in the slow cooker.
*Top with all of the other ingredients.
*Cook on LOW for 6-8 hours, stirring once or twice to blend the cream cheese.
*Shred the chicken and return to the crock pot.
*Serve with rice, cornbread, or tortillas.
Sourdough Pizza Crust (originally from @littlespoonfarm ; these are my adaptations)

100 g sourdough starter
10 g salt
30 g olive oil
250 g freshly milled hard white wheat flour
250 g all purpose flour
325 g water
*The night before, add all ingredients to a bowl and mix until fully incorporated. Cover and allow to ferment overnight.
*The next morning, perform a set of stretch & folds. Cover and place in fridge.
*That night, remove the dough from the fridge for about 30 minutes to come to room temperature. Preheat the oven to 425F with the cast iron pizza pan in the oven.
*Split the dough and shape on parchment paper. Top with sauce, toppings, and cheese.
*Carefully slide the pizza onto the pizza pan and bake for 13 minutes.

Nope! I do everything in a mixer. You could do it by hand, too.

I am really enjoying this series you’re doing! Your family is lucky to have you cooking such yummy and healthy meals for them. If my husband wasn’t dealing with a digestive issue right now, I’d be inclined to make some of them. I’ll say you played clarinet, but it’s just a wild guess, I have no idea how many of a certain instrument an orchestra would have. They seem to have more strings, so it doesn’t seem like it would be a stringed instrument.

I use sourdough for pizza crust. I bake them after forming them for 10 minutes take them out and add toppings. Finish baking 12 to 15 minutes or the cheese is melted.

The recipe on Farmhouse on Boone calls for 2.5 cups of flour. You use two cups, I assume because you are using the fresh milled flour. It would be helpful if you note that when you refer people to that recipe. Thanks! LOVE your video and teaching style!
Huh, would you look at that! When I wrote down the recipe a few years ago, I wrote 2-2.5 cups of flour. Yes, I used 2 cups because that gave me the right texture for the rolls. Sorry for the confusion! Thanks for watching. 😊
This video was so fantastic! So many small tips that will really help my bread baking. I wonder if my Kitchen Aid mixer can handle 6 cups of flour though?? Maybe I could just half the recipe?
I think most people with a Kitchen Aid split the dough: they either only make half or only knead half at a time. I have one friend who put the whole recipe into her Kitchen Aid and called with the wild west because her mixer would bounce all over the place with all of that dough. 🤣
This “hamburger helper “ reminds me of the “goulash” when I was younger, over 56 years ago. Add a little sour cream or cream cheese before finishing. When I use tomato paste, to save the rest, I put Tblspoons of it in small pieces of parchment paper. I place them in a freezer bage, label and freeze. Or buy tubes of tomato paste to store in fridge!
I don't know why but whenever I did this my instapot does not have boil setting when you hit the yogurt button mine only has low temp or high temp
You could turn on the saute function and stir the milk regularly until you hit 180 degrees. 😊
For the pie dough, take frozen butter and grate it into the flour. Takes no time to incorporate it into the flour. I do the same for biscuits. You are a very busy mom and I’m a grandma. You’re doing great! 😊
I have heard of that method but have never tried it because--believe it or not--I don't own a regular box grater! Of all of my kitchen gadgets, that is one that I'm missing. I'll have to pick one up soon! Thank you for the encouragement. :)

Older eggs peel easier. That may be why your fresh eggs (home grown) are more difficult.
Do you think the potato roll recipe could be adapted to use AP flour? Haven't gotten to the point of buying a mill yet, but you know I love baking bread and I love my potato rolls ;)

It seems that preserved green beans bring out the opinions in people, lol! It’s funny to me that people prefer frozen green beans over home canned ones, my family feels the exact opposite. In our house, home canned green beans are a treasure, frozen ones have a soggy texture. It’s kind of irritating when we put in a lot of time and effort to preserve something and then it isn’t a favorite and we have to slog through it. Hopefully, you can get through all your jars before green bean season rolls around again! I have been making those oatmeal jam bars for decades. I make them with apricot jam and they are really good! Crumbly and messy, though. I need to get some soft white wheat berries so I can use the flour for pastries, cakes and cookies. I finally made your sandwich bread and it was a revelation! Yay, no more doorstop bread from freshly ground flour! Thanks so much for the recipe. I had already ground the flour when I looked it up, so I had to figure out the amount of flour. And, I can’t use that much bread, so I halved the recipe. It turned out great! I used 2 4”x8” pans and they worked wonderfully for half as much dough. Do you know if the recipe works well if you add nuts or seeds to it?

Just mix the whey with fruit juice, tastes great.
