    At risk of sounding like a nutter- I think the positive happy energy that everyone at C and D seems to possess is so important. I honestly do believe that the mood we are in when we are cooking or baking impacts the quality of the food and passes on to whomever is eating it. To think all the lovely treats are made in such a happy envrionment just makes them all the more special imo.

I made some adjustments and now they are my favourite cookies. There is no need for freezing the dough, i bake them at 180°C for 18-20 minutes and they are perfect. Also i prefer 200 gr of white chocolate and 100 gr of milk chocolate. We don't have the candy eggs in my country so sometimes i add nuts instead and sometimes i leave it out and it still works great. ♥

I am not an experienced baker by all means but I like my cookies chewy and heard using bread flour could make my cookies chewier. I wonder could I replace all the plain flour with this recipe with bread flour? If yes since bread flour absorbs more water, do I need to increase any other ingredients to have more moisture in the dough for the bread flour? Thank you so much in advance if my question could be answered by any of you!

      There's a video that a channel called Tasty did a couple years ago where they experimented with the best chhocolate chip cookie recipes. They found that if you melt the butter in a pot, the cookies will just melt into their own puddle as they bake. That particular recipe takes a lot of effort so I don't do it often, but when I do, it's literally the best baked good I've ever had. I've only done it about 4 times, if you perfect that recipe, you won't be able to think about anything else for the next 24-48 hours. Haha! Go check out their channel, I think the video's called the perfect chocolate chip cookies or something, but you can use that method for the butter in any cookie, that's the key, the melted butter in the pot. It's all about the butter. Try boiling it.

    • @3kylajsmith
      @3kylajsmith 2 ปีที่แล้ว +2

      It should, I do it by putting it in the blender. Just be careful, it can go to far quickly, learned that the hard way. You don't want icing sugar. In most cases regular sugar works fine. Fair warning there NY cookies are extremely fussy to make. They mention it in another NYC cookie recipe that there freeze had to a a specific temperature for it to work properly.

      @@3kylajsmith That's encouraging to hear. I've made a couple of things. Mainly cupcakes. But I always have trouble with them coming out with flat tops. 1 batch is supposed to make 12 cupcakes but if I fill them with too much batter flat tops it is, lol The only recipe I haven't had a problem with is her SMBC. I've tried several recipes but I always go back to Gemma's. I really wanted to make her chocolate and orange tart but she used that new machine. She did tell us that we could find the separate recipes but when I clicked on the link for the crust that she provided it wasn't listed so I went elsewhere. But I'd still love to try hers because she uses heavy cream in the filling whereas the other recipes I came across didn't... 🤷‍♀️

      There's a pretty well-known bakery called Levain there and they're famous for having big chunky cookies like this

    I made these cookies as per the recipe but when I bake them they don’t spread out into a cookie and are still raw in the middle after 25 minutes in the oven at 180c. Any idea what I’m doing wrong?

    I left my dough in the freezer for a couple of days. When I put them in the oven to bake it did not spread and it looked just like it did before. I put them in the oven for 15 mins 180c. Help

      Did you heat the baking tray first and add them to a hot baking tray? Was the oven fully preheated? Was your oven fan assisted? If not the recipe says 200’C if not fan assisted.

    Whenever I bake the NY cookies, they are still suuuuuper soft when they come out of the oven. Is that normal? I can't even pick them up untill like 20-30 minutes later.

      I find it really helps to leave them on the hot tray for about 15-20 mins. They need time to set up a bit straight out of the oven.
