@@yoong21 Mine was pretty moist, but it depends on how you like it. The longer you bake the brownie, the more dry/cakey it's gonna be. (I baked it for 20mims)
I made this, with a few very minor tweaks, like extra sea salt and toasting the flour in a pan for the cookie dough. I was concerned it would be too sweet and rich, and it was but I couldn't stop eating it! Soo good especially for someone who prefers lighter, fruitier flavours and that's saying something! Thank you team C&D
Made these this weekend and they were a big hit! Only change I made was I used walnuts in the cookie dough instead of chocolate chips. Will be making again! Thanks!
I made these using Dutch process cocoa and brown sugar, and following the rest of the ingredients. Brownies baked 20 minutes 335 F gas oven. I would say, the brownies have to be all the way cool, and I would refrigerate after the step of putting the cookie dough on, the ganache tends to melt the butter in the cookie dough if it’s too warm. The ganache definitely isn’t set after 30 minutes, mine set after about two hours. Delicious and was a hit for Father’s Day :)
The cookie dough brownie was one of the first treats I ever bought when visiting the Soho shop! Can’t wait for my kit to arrive to make it and of course visiting the shop!
Followed the recipe exactly, delicious and very rich. Only changes I would make the next time based off personal preference (lower sugar content overall 10%-15% cause its a little sweet) and (lower heavy cream in ganache 20% so it setup a little firmer) (add a small tea spoon of instant coffee to ganche to increase bitterness for contrast).

Microwave method Place your flour in a microwave-safe bowl and microwave it on high in 30 second intervals, stirring in between. Be sure to stir well since microwaves have hot spots and you don’t want any of the flour to burn. It should take about 60-90 seconds total, and I like to use an instant-read thermometer to make sure it has reached 165°F throughout. If you get a lower reading in part of the flour, simply stir it again and heat for an additional 30 seconds. Oven method Preheat your oven to 300°F. Spread your flour onto a rimmed baking sheet and bake in a process similar to the microwave. Every 2 minutes, take the flour out and give it a stir to prevent burning. It should take about 5-8 minutes for the flour to reach 165°F. For both of these methods, let the flour cool completely before using. You want your flour to be soft and fluffy, so if it has clumps be sure to give it a whisk or sift the flour to remove any lumps.
