I made almost the exact same sandwich at my work, the only real difference was we broiled the tomato slices that we drizzled with the oil we used to braise garlic cloves to make "roasted garlic". Third pan filled halfway with garlic cloves cover with olive oil, 350 oven until garlic is golden brown and not bitter. Used that oil for a lot of recipes.
Nice to see the stuff added to the outside of the bread. I started adding cheese/herb flavoured bread crumbs to my normal grilled cheese sandwiches and it adds a nice little flavor and additional crunch. Just dust them on after buttering the bread. Good stuff.

If you have a little ceramic dish, substitute regular garlic for confit garlic. It's that much better! And you have garlic infused olive oil that you can use as well

But the next day we pre-toasted the bread then added everything and it was A-MAZING!! This is definitely a do over again and again and I will preach the word to everyone I know. Thank you, Sam.

Sam, I love that! I planted icicle radishes to mark slower plants, and had so many I did not know what to do with them. I turned the radish greens into a pesto and prefer it to Basil. Might be worth a shot! (Growing Rambo Radishes for the same thing now)

Had some leftover grilled chicken so made up a caprese filling with the chopped chicken.. put the filling in a Cresent roll ring ...delish with fresh pesto and prosciutto. Yum
Excellent recipe, Sam! Personally, I felt like it needed some aged thick balsamic on tomatoes and fresh mozzarella. So I added it and it was a hit! Everyone loved it! Thank you for sharing!

I re-watched your video on cheesy grilled meatloaf and made it. Turn out awesome. Everyone loved it. Had very little left overs, but there was enough for me to have a leftover meatloaf sandwich. It,s like you said, leftover meatloaf is better. Thanks for the entertainment and the recipes.

Putting the basils, tomatoes and cheese on the outside of the sandwhich gave it such a nice look to it. Today I learn!

Salt the tomatoes lightly and leave them sit before building. It will draw out a bunch of the water from them instead of cooking it out.

I’ve been doing something like this as a low carb wrap a lot recently. Chicken tomato mozzarella spinach and a pesto mayo.
