Blackberry Cobbler with Pie Crust

  • Blackberry Cobbler with Pie Crust and dumplings is an old fashioned Southern dessert that is perfect for the summer. Although many cobblers use cake mix, Bisquick, or canned biscuits, pie crust gives this cobbler a unique combination of not only flavors but also textures.
    Although you could definitely use fresh blackberries, I used frozen blackberries because they are all in season and are easy to use since there is no prepping. However, I used a homemade pie crust, but you could definitely use a storebought pie crust in your blackberry cobbler to make things super simple.
    I started by boiling the frozen blackberries with water and sugar. Although adding water to a cobbler may sound odd, you need to add some water if you are going to boil the berries because if you don't, eventually all of the juice in the berries will boil away and the berries will stick to the bottom of the pan. It may also seem like boiling the berries before adding them to the cobbler is extra work, but most old fashioned blackberry cobbler recipes with pie crust in the South first call for boiling the berries: that way, you ensure that some start to break down and help to create a thicker syrup.
    Everyone is familiar with pie crust on the top and bottom of a cobbler or pie, but most people have never thought about putting pie crust inside of a blackberry cobbler to make dumplings. In many traditional Southern cobbler recipes, people add little pieces of pie crust, drops of dough, or pieces of biscuits in order to form small pieces of dough within the fruit filling. Even though some may think this boiled dough would turn out spongey or leathery, it is actually smooth and silky, the soft pie crust dumplings offers a great contrast to the crispy pie crust on the top of this blackberry cobbler.
    This blackberry cobbler with pie crust and dumplings is the best, so I hope that you watch my recipe video, as well as Ms. Brenda Dee's video.       Yes, I like my pies and cobblers to be firm--I could see some people wanting their blackberry cobbler to have a bit more juice, so that is why in my commentary I said that you could decrease the cornstarch a bit if you wanted.

    I simply adore blackberries. When l was a little girl they grew wild on our farm and we had them so many ways. Even just warm right off the vine. This is a great recipe.

    I finished my 30 days off sugar! Celebrated with a bowl of ice cream the next say at 930 in the morning LOL. Back off sugar until the end of the month. Maybe I will make this to celebrate next 😊

    Parnell now you’ve done one of my favorites blackberry cobbler this looks so delicious and tempting. Love how you used your homemade crusts and cut them to fit the square cobbler pan but very good tips on over boiling the corn starch that it could lose its thickening ability I love how you just added it at the end and let it simmer in the oven great latticework obvious on your top pie crust when you cut into this I was there with my fork ready to share fantastic recipe

      I have been learning a lot about cornstarch lately: overboiling can reduce its thickening powder, as does lemon juice. Who knew!

    I take half the berries and use a potato marker and mash the berries. I use tapioca to thicken. Bring to a boil, boil 2 minutes add the rest of the berries. I get rave compliments on my berry pies or cobbler.

    My grandma was a southern woman. She made a rendition of this and called it pot pie (made in a pot). She didn’t use a bottom crust. She added pie crust dumplings and butter pats before putting on the top crust. There was nothing better!

    do you have any tips on hard to cook things (esp when one has no idea how to handle somethings) like okra? i have yet to find a no slime or even low slime way o cook or fry them(i love them though)or tripe? & how do you cook your beans? any tips or tricks there?

      Unfortunately, no tips on okra. You are right, it can definitely be stringy--so that is something I have yet to refine.
      I don't usually fry things, so no experience frying them either.
      Tripe...no, no experience with that, either.
      For beans I just soak them the night before, then I add some salt and pepper and cook them on medium heat for about an hour. I like cannelini beans, sometimes red lentils, once in a while lentils. For me, beans are something I eat when I am trying to be healthy, so no fatty meat in them, lol

    I want the crust. My grandma made blackberry rolls. Two rolls of berries in the casserole. She didnt cook the berries first. Just sugar, berries, flour and butter. Have you ever made it that way?

    The lattice work dumplings are a nice touch, a little extra work that no one will ever know about. That is something I would do, like my own private little secret. I kind of like how your filling came out more thick, but like you said it's all subjective. Now slap some vanilla ice cream on there & let me dig in!

      The lattice dumplings inside of the blackberry cobbler definitely worked out--so much flavor and texture.
      And yes, you are right--the lattice work is like a secret. Nobody would know how pretty it was before it was buried by more berries, haha.

      Hi, Jeanne!
      I just checked the casserole dish. It says 8x8, 2 Quart, but does not say whether it is deep dish or not.
      I took out my ruler and measured, and it looks to be about 2 inches deep.
      The brand is Anchor.
      I am not sure if I have ever seen an 8x8 dish sold as deep dish, so I assume that most in the USA are about the same?

    This something I tried... Instead of 💦... I used a 🍒 coke... Or black berry juice..... Also vanilla sugar

    Can you use flour and water instead of cornstarch

      Hi, Jeannie!
      If you want to use flour instead of cornstarch, double the amount. For every tablespoon of cornstarch, you need to use two tablespoons of flour.
      However, with more thickener, you may also need to use more water to dissolve it. I would try a tablespoon or two more, then add more if it doesn't dissolve.
      However, imo, if you can wait until you can go to the grocery store to buy cornstarch, that is what I would do. Flour can thicken liquids, but it is more likely to give the food a chalky taste, as well as change the color of the liquid.

      Awesome! I think you could definitely make it with flour if you have to, but like I said, I think cornstarch is better.
      I am sure that your cobbler with be incredibly delicious! Not sure if you saw, but I redid this recipe recently. I did not use a bottom crust, only dumplings in the middle, and I decided to use a lattice top instead of a solid top. I also added lemon juice instead of vanilla. Just some ideas...

      And yes, I think that lemon juice is better, as is leaving out the bottom crust. I revisit recipes once in a while to tweak them. Sometimes trying something new can lead to good discoveries.

      I am so sorry to hear that your cobbler didn't turn out. Did you add the cornstarch? Did you boil the berries for 10 minutes?
      Even though the blackberry filling didn't thicken up, at least it tasted good--that is what matters.
      However, if we can get to the bottom of what happened, next time it will turn out perfectly. 👍

      After cooking the berries, you could pass everything through a strainer. Honestly, I think that removing the seeds would remove a lot of the "mass," so you may have to double the recipe for the filling to make a decent amount...I have never tried it, so that is just me thinking
