    Thank you for your great video. I love how you pre-baked the bottom crust. I am going to try the trick of sprinkling flour directly on the pie pan then place lower crust. I drained the juice and will make a slurry with it to ensure the pie sets up. Here’s to hoping it works out 🫰
    Edit: I just watched you cut a piece of blackberry pie and she’s gorgeous! Well done 👍

    OMG this looks so delicious I love BlackBerries but never made a blackberry pie thanks for all the tips especially two of them one how tart the blackberries are and second how much liquid they put off when they cook you did use a lot of corn starch that must be the reason why you’re so detailed when it comes to cutting those slits on the top crust amazing work my friend

    • @ParnellTheChef
      @ParnellTheChef  5 ปีที่แล้ว

      Thanks, Jeff! Blackberry pie definitely requires more sugar, and more cornstarch, than you would think. I am detailed about the slits to not only help vent the steam but also to make it easy to know how big to make the slices. But I guess it doesn't matter since I eat all of my pies by myself, haha😉👌

    • @ParnellTheChef
      @ParnellTheChef  5 ปีที่แล้ว

      I love fruit pies, too! I have cooked the filling before putting it in the pie as well, sometimes even to the point of not needing cornstarch. That might be a good idea with blackberry pie since a lot of cornstarch mellows out the flavors. Actually, I might just try a blackberry cobbler next!👍😉

    Here in southwestern Oregon, we had a great blackberry season. I picked and froze just over 20 pounds of berries from my property. My family has eaten some, and I made 2 gallons of blackberry wine. I still have about 10 pounds of berries left, and I'm going to try this pie for Halloween.
    Thank you for the recipe.

  • @AliciaLynnYT
    @AliciaLynnYT 5 ปีที่แล้ว

    I love blackberry pie, probably because of the tart and sweet contrast. I like that you used frozen berries. I think this would be great with the frozen berry blend I always have on hand which has blackberries, raspberries and blueberries. I am totally ok with it being a little runny as long as the flavor is great. I prefer pies over cobblers anyway. Thanks for letting us know about your issues with it being runny though! And of course I love how pretty all 3 looked, love that sugar on top! Oh, and I love the music you picked and how you still got your other song in at the end. Perfect!!😃💛👍

    • @ParnellTheChef
      @ParnellTheChef  5 ปีที่แล้ว +1

      I like it because of the sweet and tart contrast--if you like that, you would like pastafrola with dulce de membrillo--remember that one? haha.
      It would be good with frozen berry blend! I made a pie when my friend from Argentine visited: one bag of berry blend (which also had strawberries) and one bag of sweet cherries--very good!
      It took a few tries to perfect my blackberry pie with frozen berries, but like I said, I learned a lot.
      The sugar on top is good for not only extra sweetness bur also texture--the crunch is very nice combined with the soupy pie--it would be good on a cobbler, too, I think.
      I think the music was a good compromise: still reminding people that I do Argentine recipes as well.
      Thanks for stopping by, Alicia!👍

    • @ParnellTheChef
      @ParnellTheChef  5 ปีที่แล้ว +1

      It's complicated--it's debated lol.
      In general, a cobbler may or may not have 2 crusts, is usually runnier, and may not be round--it is usually square. Also, the crust does not have to be a "pie" crust: it could be biscuits, a cake top, etc. Cobblers are much more loosely defined. Like I said in the video, blackberries are juicy, so I think they are better suited to cobblers😉

    Flour in pies also makes a good thickening agent, it is used in a lot of apple pies.

    • @ParnellTheChef
      @ParnellTheChef  3 ปีที่แล้ว +2

      Hi, Raymond!
      You are right: flour is definitely used to thicken pies as well, as is tapioca starch, potato starch, etc. However, most cookbooks will tell you that cornstarch produces a less cloudy jell than flour does, so that is why I use cornstarch. It is also more likely for people to have cornstarch on hand than potato starch, so that is another thing, as well.

    This was the go to in my family growing up in the summertime. And I choose it over all pies. Unless it's lemon meringue. Then a slice of each.
    Corn starch is a must.. there was always a pinch or two of nutmeg. No idea why. I think the elders used it to cut a little of the sour off. I rank this a 10 out of 10 for food porn.

    • @ParnellTheChef
      @ParnellTheChef  5 ปีที่แล้ว

      Blackberry pie is definitely good! Since you also like lemon meringue, I think you like the sweet / tart combination. Cornstarch is definitely a needed thickener...and a bit of nutmeg would be a good idea, I think! However, now I've convinced myself that blackberry cobbler is likely a better choice, so I have to make that soon, haha👍😉

    cobbler recipe?

    • @ParnellTheChef
      @ParnellTheChef  5 ปีที่แล้ว

      You could easily turn this blackberry pie recipe into a blackberry cobbler recipe:
      Do everything the same, except only use 4 Tablespoons of cornstarch instead of 8. You could use one crust, two crusts, etc.--it's up to you. I would keep the baking time about the same, perhaps a few minutes fewer...I would just keep an eye on it.😉👍

    Funny how were all different, I don't want a blackberry pie where the juice doesn't run at least a little. I can't stand that "jellied" effect! It's a texture thing for me.

      Hi, Adrian!
      I totally get what you are saying. I am not sure if you saw my "failures" towards the end, but if you want the pie to be a bit runnier, cut back on the cornstarch a bit, perhaps by two tablespoons.
      I also have a blackberry cobbler recipe that you might like...
      Thanks for watching and commenting!😀👍
