    Now that's how to make a TH-cam instructional video - No inane chitchat, no annoying music, no kids running around and screaming in the background. Professional and to the point. I learned so much in such a short period of time! Definitely going to try some of these :)

    Hi payge satek, Just until they are firm enough to remove from the paper. You can leave them on the bench to firm up if it is easier.

    These are really good techniques to do easy chocolate work without using acetate paper. One thing to note is whenever you're doing chocolate (or even sugar) work on foil, spray the foil with a bit of cooking spray so that the garnishes come off of the foil with minimal breakage.

    If I have time to temper I use cadbury block chocolate because I like the taste. If short on time I use nestle chocolate melts which do not contain cocoa butter so do not need tempering.

    Hi Midnightlove404 usually I use either nestle dark and white chocolate melts or cadbury block chocolate. Melts are generally easier to work with as they seem easier to keep in temper.

    Hi Ambriz57, You do not need to temper candy melts as they contain a different type of fat. Chocolate is made from cocoa butter and candy melts are made with vegetable fat. But you can still use them for chocolate decorations - if you like the taste.

    Hi Linette, yes you need to temper your chocolate or it will melt at room temp - there is a link at the end of this video or in the description under this video to the temper video that explains how to do that. Or you can use 'fake' chocolate like candy melts.

    Hi 01nadiaaa you will need lollipop sticks - put them on your baking paper and then pipe a swirl of chocolate over the top half of the stick. Then before it sets sprinkle with sprinkles for kids or chopped pistachio nuts and dried fruits for adults or popping sugar.

    You are so creative! Your tutorials are concise and shows us that we do not need the fancy equipment that the other tutorials have. I am a novice baker and have to admit that I have spent quite a bit of money on equipment. I just started working with fondant and the cutters,veiners and petal dust are expensive. So happy I found your videos !

    Hi pokergalpoker, if you are using real chocoalte containing cocoa butter let them set on the bench, if compund or fake chocolate that contains vegtable oil then in the freezer for about 5 minutes. I havent seen wax paper here so you'd have to try it and see if the chocolate sticks to it when set or not.

    Hi Alyssa Beaman, It depends on the chocolate you are using but usually it only takes a few minutes to firm up in the fridge or about 10 minutes if left at room temp.

    Hi richienpaula I am in Australia so I am not sure if you have the same brands - for this video I used tempered cadbury block chocolate. My choice on chocolate brand is purely on taste. If you look at the ingredients if it has cocoa butter it is real chocolate and needs tempering if not (like some chocolate melts have a different fat in them) then you can just melt it.

    How come they don't melt once out in room temp in summers ?

      They have been tempered properly which means it has been melted to a specific temperature so it is runny enough to work with but not to the point where the cocoa butter crystals melt and not set firm at room temp.

    Hi youremyhappyvirus, Yes but you need to use oil based food colouring or powdered colorings. The normal liquid colours will cause the chocolate to seize and go lumpy.

    You can use any chocolate you like the taste of. If you are using real chocolate which has cocoa butter in it, then you need to temper it - see link at end of this video for how to temper chocolate this explains how to melt it correctly. If using chocolate melts that do not have cocoa butter - they will have vegetable oil as an ingredient instead, then you can just melt it.

    Hi Seyed, please watch the video on what chocolate to use for decorations, click on how to cook that to go to the channel and you'll find it there under chocoalte. Hersheys is real chcooalte so will need tempering for it to set at room temp, there is a vid there on tempering too.

    Did you temper your chocolate? Follow the link at the end of this video or click on the channel and look for the vid on how to temper chocolate in the microwave - it explains why they would be melting so quickly. I used nestle white chocolate melts and dark melts.

    They might not be strong enough to hold their shape under the weight of the chocolate, some supermarkets sell kafir lime leaves for using in curries you could use those.

    It depends what I have available at the time - sometimes I use candy melts, other times block chocolate (no cream just chocolate).
