- Today I'm sharing with you my Nonna Pina's Italian Easter bread recipe! This traditional Italian Easter bread is a soft, sweet and flavorful brioche style braided loaf that's baked with sprinkles and features a bright and colorful egg at its center! This Easter bread is really easy to make and I'll show you everything you need to know to make this bread perfectly at home, including how to dye your eggs!

🥑🍓🥦🍉🍋 INGREDIENTS 🥔🥚🍫🧁🎂🍰
300ml (1 1/4 cups) whole milk
120 grams (1/4 lb.) butter
2 large eggs
110 grams (1/2 cup) sugar
zest of 2 large lemons (approx. 1/4 cup)
8 grams (one packet) active dry yeast
480 grams (4 cups) plain or all-purpose flour
1 egg + 15ml (1 tbsp.) water, for the egg wash
sprinkles
flour, to dust your work surface
butter, to grease the bowl
To dye one egg:
1 egg
237ml (1 cup) water
food colouring (gel, drops or natural)
10ml (2 tsp.) vinegar
This recipe makes 4 small loaves or 2 large loaves.

No doubt about it, Nonna's recipe for Easter bread is a good one.
It looks a lot like panettone Christmas bread but without the height and I'm sure this would be lovely with an Italian espresso.

hi there, one of my grandmothes were from the north and south of italy but they never made this. so i'm giving it a try this year. Can i make it today, refrigerate the braided loaves and bake them Easter morning

Can you add dried sultana's ?
Yes! I’d recommend rehydrating them slightly, so they are easier to eat, just in a little bit of warm water or tea for about 30 minutes. Then after the first proof, when you spread the dough out into a rectangle, spread it a little thinner, and sprinkle the sultanas on top. Roll it up from the bottom and then cut into your pieces. Hope this helps! 😻
Have you ever added sugar and cinnamon before braiding?
I haven't, but it would work just fine! After you've rolled out the dough into your thin logs, sprinkle them really well with cinnamon sugar, making sure all the sides are coated - and then continue as usual! The cinnamon sugar will make the dough slightly darker, and you might experience more difficulty with the egg wash, as it'll wash off the cinnamon sugar. I'm going to try adding Nutella to mine next time! 💖😻

My breads are on their second rise. I was just called and need to run out for about 2 hours. Will the breads over proof?? I guess it will be about 2 and 1/2 hours total (again, on the second proofing) instead of one hour. Should I put them in fridge?
Definitely put them in the fridge. It will slow down the proof! Then let them proof a bit more out of the fridge when you’re back! 😻

Can you please clarify how many small loaves this recipe makes? If I wanna make the size you made that is a small circle with one egg in the middle? Also, is it unusual that this recipe does not call for any salt?
This recipe makes 4 small loaves, which fits the one egg in the middle. I normally add salt to my breads, but I used salted butter, like my Nonna did, so didn’t add any in. If you are using unsalted butter, add in 1/4tsp with the first addition of flour! Happy baking and Buona Pasqua!

I made two loaves and they looked beautiful but the eggs were raw😢 and the bread just didn’t taste very good the next day. I used lemon zest and a few drops of almond extract. Edible but disappointing….
Oh no?! I'm really sorry to hear that! 😿 Several others have made this recipe with success, and whenever I make this bread, the egg is usually comes out hard boiled! It might be worth getting an oven thermometer, just to check that your oven is reaching the correct temperature. All ovens are different and it sounds as though it's not getting hot enough. The resulting bread should be light, fluffy and have a taste that's similar to a hot cross bun. I hope you'll try my Nonna's recipe again sometime! 💖😻
