That's terrible! You're not helping out the CCP-owned mega-slaughterhouses, and the other "middle-men" in the process. Only the people doing the work to produce the food are getting your money! We're mobile, so different places over time. Near one, we found a farmer who did everything except the slaughterhouse part, which he used a local operation for. Other places, we've at least found real butcher shops that sold local meat.
One trick I have figured out, is buy a tube if burger, what you called a chub pack, throw it in the freezer till it gets nice and firm, usually about 2 hours depending on the size, take the outer wrap off, get a good size sharp knife and cut your patties... its already round and you can choose the thickness of your burger!! Then I put in vacuum bags and seal !!
I'm thrilled to see the recommendation for stock with the turkey carcass. BUT! Viewers will be infinitely happier with the stock if they roast the carcass prior to putting it into the pot. Cut up the carrot, onion and celery and line the bottom of the roasting pan, put the carcass on top and roast at 375 for about 2 hours. When you remove the pan, take just a little bit of water and loosen up all the pan droppings. Then place everything in a stock pot, add about 6 cups of cold water. Bring just to a boil and then reduce to a simmer for about an hour. All of the bones will give up their goodness, and you'll wind up with stock that geletainizes beautifully, along with a rich deep flavor you wouldn't get otherwise.
For those of you wondering what meat slicer he is using, its a Borlebbi 200w slicer. I found it in his video called "I Saved $10 Per Pound On Deli Turkey Lunch Meat" uploaded approximately 2 months ago.
I had some Cabela's bucks to burn one year and bought their slicer that looks identical. It is "okay" but you cannot get "shaved" meat from it unless you basically freeze the meat first. Perhaps I am not using correctly. Still, it's is nice to have it.

Most people don't realize that you can get meat cut for free in the butcher department, such as having a whole pork loin cut into chops at your preferred thickness for free! They will also sharpen your kitchen knives for free. We've brought my 23 year old 8" Chef's knife to Kroger on several occasions before we bought a knife sharpener.
Wow. $0.69/lb? That is insanely cheap. I usually buy breasts when they are on sale to save time during the work week. The Walmart near me sells whole chicken for $1.34/lb. I get three meals out of it. If it is winter, the remaining bone and other stuff goes in the soup pot for broth. (winter since I don't mind having my kitchen heated up while it cooks for hours) I roasted half of one last night and have meat left over for chicken salad.
I haven't seen chicken breast or any chicken parts for .69 a pound for years. You're lucky to find that. I watch for them to get marked down close to their use by date at one local store. Saves a little but they're still expensive.

Sold in a 'family pack' so I walked out with three of those packs which ran just over $5 each! Not much of a fan of white meat on chicken or turkey, these will be roasted and the meat removed and made into chicken pot pies or chicken sandwiches for weeks! Sometimes that store goes weeks between great sales so it is definitely worth watching those sale ads!
YOU WANT THE SKIN IN YOUR GRIND!! I make sausage so I grind a lot of meat. The skin will add a little fat to your grind to enhance the flavor and allow for a juicier grind. If you find your turkey recipes dry and crumbly it's because there's no fat in them. Partially freezing the skin along with the turkey before you grind it will allow you to put a little bit of fat into the turkey and give it more flavor and better texture.
Another thing that drives me crazy when it comes to our food are phrases like “Country Style” or “Homestyle”. It makes me feel like this is somehow more delicious or wholesome, which is a lie.
It’s all a play on words for a marketing strategy…just like cage free eggs, chickens may not be in a cage but in a chicken huge house and as long as it has some kind of a door they can also say free range , but the bird may never touch grass🤷♀️…we have to rethink/ retrain our brain not to fall for the marketing ploys
I don't buy anything from my local walmart unless they have a heavy sale on something. Between aldi and my local regional grocery store I can get better quality meats for less costs every time. Especially when they have sales there.
You don't need sugar in anything, any more than you need type 2 diabetes, heart disease, kidney problems, metabolic syndrome, Non-alcoholic fatty liver, etc, etc. It's all from sugar and starch NOT meat!
I always learn a lot from your vids. Can't believe Standing Rib Roast has doubled in price from this time last year. It's been a Christmas tradition in my family for many, many years. I'm from 🇨🇦 I usually buy a large beef tenderloin at our grocery store when it goes on sale every few months but I don't see those sales anymore 😢 . Their beef tenderloin is now $92.00 kg for cut steak . It's a shame .
What’s nice about some of the pre-made burger patties is that they have different blends like short rib and brisket blends but agree that just an only ground beef is a waste.
The biggest thing you can do to save $ is shop the meat sales. I've gotten very good hamburger meat for as low as $1.49lb! And boneless skinless chicken breasts for .99cents lb, whole chickens for .69 lb. Buy the limit, portion out and freeze. You'll seriously save hundreds and eat very well.
I've got a patty press for making burgers. If you cut your won steaks or smoke meats, you'll have a lot of trim, and it can be ground up for burgers. Even buying the cheaper packs of ground beef may cost a lot more than using trim and the press (and a scale) gets you the same size and shape as the pre-made burgers. As for burgers, cut pork loins, pre-cut chicken, brisket, etc, the story is the same, you pay a LOT for the convenience of not cutting or grinding it... but cutting and grinding both pretty easy. You save money by doing some work yourself.
I would buy the preformed patties if I found myself going to a grilling event on short notice. It's normal to pay for convenience, but you don't need to pay for convenience all the time.

You can add the skin to the pot when you are making the stock. Leave out the onions because they are toxic for dogs. If you cook the stock long enough, the bones will get very soft and crumbly and will not splinter. Strain the stock and feed your pets the bones. When you chill the stock, the fat will solidify on the top. You can scrape off the fat and add a little to your dogs’ food once a day. They will be very happy!!
Generally agree with these although to be fair to the brisket flat, that's a fully trimmed cut vs the full packer brisket where I'm usually trimming about 20%-25% in fat. I'm still buying the whole packer at Costco as I'm cooking it on the smoker but there is definitely some waste that comes from it and I usually have about 4 lbs. of fat trimmed from a 12-15 lb. brisket.
What’s funny is I was going to cook some chicken for a salad today but my store had that same package for 2:99 so ended up getting a few as it was around the same price without cooking.
Just found you last night. I’ve almost been marathon watching your videos. My husband who is not easy to impress was fascinated by the price differences. I was hoping to find a cut of pork where bacon comes from. Next time I go to Sam’s, I’m going to look for it but I’m not holding much hope. I contacted a local butcher shop and unsmoked is $6 per pound. A pound of bacon at Walmart all sliced up is $3.82. *sigh* I love to help the local companies but that won’t work in this case. Smoked by the way was $8. I’m not big on smoked. I’m looking forward to many more of your videos. I ordered a meat slicer on last night on Amazon thanks to you. It’ll be here on Thursday. I also make my own bread so I’m looking forward to seeing how this slicer works on bread. I had a slicer years ago - I think it was a Cuisinart. I was NOT impressed. I took it to the local thrift store if I remember right to donate it. I however really want to save money so I’m hoping this new slicer is a bit more impressive. Obviously the commercial slicers are too much and too big for just me and my husband. We have limited counter space and storage space so I’m looking forward to Thursday for its arrival. if you have a kitchenaid stand mixer the meat grinder attachment works just fine. The most I've ground with it in one shot is 4-5lbs of pork (passed through twice) and that's the most I would do with it in one shot. It is like $100 (1st party) but if you don't have the space for another appliance its worth it.
I used to work for Cargill and they are Walmart meat supplier. Knowing what I know I refuse to buy meat from Walmart. You take your life into your own hands.
I don’t disagree with you about the hamburger patties, but the ones I can get down here in South Texas near Corpus Christi, the half pounders, cook up so beautifully and so perfectly I have yet to find any ground beef that’s any better
for 26 years I did a BBQ fund raising for our Boy Scout Troop for 500-600 people. So yes I have and when I was done, I didn’t want to eat a thing. LOL
Occasionally I buy the patties out of laziness. However, tonight I decided to never buy patties from Walmart and also to read ingredients on any ground beef I buy. The Walmart patties list natural flavors on the ingredients. I decided to look because the 85/15 patties I bought had very little flavor and barely any fat came out of them and the didn’t shrink at all. Similar patties I buy from a local farm fill the pan with drippings and taste like beef.

It’s not meat but I no longer buy prestressed cheese. I do it myself and it only takes about 5 minutes and yes I am recovering from a small stroke. I get so much more from a 1 lb block of cheese.
Money is a unit of human labor. Whether you pay someone to do the work or you do the work yourself the work still needs to be done. How much did you invest into your tools? Breaker bar + boning knife + slicer + grinder/stand mixer? With 4 kids you can probably justify the investment to get a savings. For a normal person how much product do they need to process to start to see a return?
If you don't want to put the skin in your grind, put it in your stock! Skin has collagen and will add texture to your stock if you allow it to simmer long enough. In addition, skin has fat, which will render out and you can separate from the stock and use for cooking.
I bought the precooked meat in steak for fajita variety when I had surgery and couldn't cook. Expensive and I couldn't even eat ONE bite. It was nasty.

Don't country ribs come from pork shoulder? Those loin ones would be dry as f. And F that butterball. It's pre-brined. Ground turkey is not pre-brined so no salt. Good luck finding un-brined whole or parts of turkey they don't exist unless you know a poultry farmer.
Whelp, I buy most of the things you say not to buy. I have my reasons, but it's hard to articulate whether they are justifications to assuage the guilt of throwing money down the drain, or valid reasons spending more makes my life easier and is worth that extra cost. ¯\_(ツ)_/¯

I was lucky, I found a 1957 Hobart slicer with all of its parts for $150. Beats any trash you can buy today!
Brisket is excellent in Texas chili. Cube it at 1-1.5" and sear the cubes...then slow cook them in the chili. It's worth it. SO much flavor.
And NO Beans in TEXAS Chili 🤣🤣🤣

When making the flat packs use your rolling pin. It will be nice and flat and stack well in your freezer.

Why would you throw away the turkey skin? Bake it until crispy. Add salt. Very yummy. Or brown it and add it to your stock for some added flavor.

It’s not meat but I no longer buy prestressed cheese. I do it myself and it only takes about 5 minutes and yes I am recovering from a small stroke. I get so much more from a 1 lb block of cheese.

Money is a unit of human labor. Whether you pay someone to do the work or you do the work yourself the work still needs to be done. How much did you invest into your tools? Breaker bar + boning knife + slicer + grinder/stand mixer? With 4 kids you can probably justify the investment to get a savings. For a normal person how much product do they need to process to start to see a return?
Storage space is a concern too, living in a double wide!

You can buy ham and chicken or turkey and take it to the deli and they will slice and package for you at no charge.
The turkey meatball recipe is in the description but there is no link for the meat slicer or any other kitchen tools.
If you don't want to put the skin in your grind, put it in your stock! Skin has collagen and will add texture to your stock if you allow it to simmer long enough. In addition, skin has fat, which will render out and you can separate from the stock and use for cooking.
from my understanding, country style ribs come from the shoulder, not the loin

Don't country ribs come from pork shoulder? Those loin ones would be dry as f. And F that butterball. It's pre-brined. Ground turkey is not pre-brined so no salt. Good luck finding un-brined whole or parts of turkey they don't exist unless you know a poultry farmer.

Most of their shrimp is from Vietnam, Thailand , etc...............which are poorly farmed, Only buy USA shrimp !!!
