I know the Duck, Burnt Ends & Lamb Shanks are definitely a limited availability item. Good video review of some new or returning items.
I was watching one of your videos in which you used cling wrap. For a guy who loves Costco so much, I suggest you get cling wrap from Costco. It has a slide cutter. Makes super easy to use. I usually set it next to my cutting board pull out what I need without cutting. Put my meat or whatever on it, then slide the cutter and done. No fighting.
I've used both BJ and Costco. Costco has less scrunched less usable wrap at the center than BJs but both cutters work fine while being different designs.
Considering cost and quality at the same time, I have been buying that duck product for years. Of course there is no accounting for taste. Each person‘s taste buds are different. I usually serves the duck with hoisin sauce. It actually is a good combination. Further, I have served this stuff to many different people who have somewhat sophisticated palates and they are all very impressed by it. I use a Cuisinart griller and cricket for about 12 minutes. Both sides are cooked simultaneously and it leaves grill marks on the skin. Given what duck cost in a restaurant usually 30 or more dollars for an entrée the duck is very reasonable. In addition, I prefer it to chicken because it is, more flavorful
The duck is our family's favorite by far. It's frequently sold out so we always grab 3 or 4 packs when they are available. We like the fact that we can make our own sauce to serve with the duck. Will try Hoisin sauce the next time as you suggested. Orange marmalade with mustard, mixed with some hot water to thin it out some is also very good.
The most processed food I buy at Costco is the thinly sliced NY steak for making my own jerky. For traveling I will buy the Tillamook no sugar added jerky. I keep my carb intake low so I almost never buy cooked food.
Our Costco has a different brand of lamb thanks that has garlic and rosemary. I wrap the shank in foil and put in the oven, uncover for the last 5 minutes. We really like it served with parsnips. I would crisp up the duck in the oven. We buy rotisserie duck at the local Dutch market. It's kind of flabby but I crisp it up in the oven and it's very good then. Hard to hurt a duck!
Thanks for the reviews. Suggestion for the duck: try pan frying it skin side down for a few minutes to start the fat rendering before putting it in the oven. Throw together an orangey kind of sauce ... might work.
I do it in a convection oven and give it a minute or so past the max time so it's heated through and mostly crispy on the top. The salt is easily corrected at the table.
I almost cried when I saw you nuke the Lamb LOL I would do the duck in the airfryer for crispy skin. I have a box of the burnt ends in my freezer, and now I'm finally motivated to make them. Great video!
Here in Hawaii, thankfully our Costco poke looks and probably taste much better than what you got. Your poke seems to be missing sliced sweet onions, sliced green onions and seaweed. They provide crunch and texture. Also a touch of Asian sesame oil is needed.
I had the lamb shanks a long time ago and loved them…I couldn’t believe how good they were served with mashed potatoes…I actually have forgotten about them probably because they they would have to be a special dinner only because of the price which is normally not in my Costco budget since I can go wild in there!!!
Funny, everything you said sounds like something I would say except ... I have never been to Hawaii & the sauce on the lamb shanks was too thin (I would have added red wine, reduced it and worked in some cold butter).
The ones we got here in Arizona a couple of months ago came with an enormous sauce packet instead of the full weight of beef, but the beef was such garbage even that much sauce couldn't fix it. Total swing and miss by Costco's buyers.
I was NOT a fan of the burnt ends. They're a Kirkland replacement for the Mission Hills burnt ends, which were fantastic. The thing I liked about those was they had amazing flavor (pre-saucing) even done in the microwave. I microwaved the Kirkland version and felt like I was eating a piece of beef that I had lightly seasoned and thrown in the oven until medium. Just very, very little flavor IMO. The Mission Hills version is far, far superior. I'll have to give the oven method a try, though I don't think that will have any effect on the flavor of the beef. Really underwhelmed with those.
Totally agree… the Kirkland replacement didn’t have near the flavor and had a ton of fat cap versus the Mission Hills… I’m not fond of paying that much per pound only to be paying for fat instead of beef!
Did they smell like fish? The ones I got smelled like fish. The only guess I have that's at all legal is they smoked the meat in a smokehouse along with a load of salmon.

Probably hitting Costco tomorrow to stock up on ground beef and other items. There has definitely been an uptick in Asian foods though. Heavy emphasis on the frozen ones. Some great shrimp dumplings recently. I'm hoping we get the sushi sooner rather than later, but we'll have to wait and see. Saw the beef jerky on my last visit and debated hard, but it had sugar and I'm trying to wean myself off it. For the poke, you could buy frozen tuna, unthaw, dice, and make your own marinade. Plus here in Columbia there are a few fresh poke places so not sure it's worth it.
The Wagyu jerky is good but it’s a small size bag and more expensive. Rather get another like Gold Coast which recently changed their formula and it’s so much better it’s amazing. What I really miss though is Perky Jerky that was basically soft and almost wet candy jerky.
The SRF jerky is by far my favorite but it seems to appear at my local Costco randomly. I don't know what the deal is, but they only seen to carry it a few months a year ..
can you release a list of each cut of meat and at what price per pound youd recommend buying a full pack at for home butchery? so like with a tenderloin, is 14$ per pound ur max? or is it still a value at $16, etc etc. and then gotta take into account if its choice or prime too. this would be super helpful thank you!
I bought the burnt ends recently and I outright DEFIED the cooking instructions! I added Bourbon and Brown Sugar Seasoning to mine... then BBQ sauce and I put them on the top shelf of my BBQ. First time I did them at a bit too high heat and the fat continued to render out... Which was still ok... second time I did them, I did at lower heat... and there were a few pieces my guests left on the plate for being too fatty... But their reaction was very good. Definitely a re-purchase item!
I asked him on one of his livestream if he ever went and he said his nearest one is a couple hours away. However I went to there and found a WHOLE (5lb) tenderloin for only 60$ compared to normal Costco which is about 160. They also have 12.99 cut ribeyes and 9.99 uncut ribeyes, both from the same New Zealand company
We've become so lazy and used to processed pre-prepared foods that this is the result...meat from a bag. Lamb shank from a bag out of microwave.....I shudder to think of the texture and how old that meat is. We're so used to eating a 5 min meal with artificial flavors that most people have no idea what freshly cooked meat tastes like let alone how to cook it. We shop Costco weekly but honestly all this overly processed stuff is a hard pass. We even stopped buying store brand jerky 5 yrs ago and now only get ours through a butcher, it costs more yes but it also tastes night and day different.
I tried to like the burnt ends, twice. Underwhelmed. I much prefer the Mission Hill Bistro Smoked Sliced Beef Brisket that Costco in my area (Northern California) sells.
I've purchased the burnt brisket ends within the last month. What was in my package was basically inedible. So much gristle! It was awful. Should have returned it for a refund. I had high expectations, normally Kirkland brand does not disappoint. Although my dog approved. One and done!
@@katannyadirkson6147 Not necessarily. Mom was a baker and as kids we ruined her cake pans using them for other things. Residue was left over from other foods, so the pans required scrubbing thereby ruining the surface.
The duck is fire if you give it more heat and time, but the burnt ends we're getting in Arizona are garbage. A third of the weight is the sauce packet (yours didn't even have sauce, so Costco is using entirely different products in different places). The meat smells like fish, and is stringy in the way real burnt ends of brisket aren't. And the sauce is sad sugary cafeteria barbecue sauce. Just an awful experience.
I can't brother. None of them for me. Entertaining but I wouldn't eat microwaved plastic. Looking forward to my next lesson in breaking down large cuts.
Soy Sauce is mostly viewed as unhealthy due to its high amount of sodium. Considering the size of the fella in the video he should be avoiding soy sauce.

I put mine under the broiler for a few minutes to crisp up the skin then it's really good with a sauce.

The Kirkland Burnt Ends are barely passable. They sometimes sell the MainStreet burnt ends, which are a better product.
