I don’t really use recipes, but for one big tray like I made here’s the loose idea: You’ll need a packet of lasagne sheets. 2 tins of pasta sauce or make your own. Ricotta filling: 1 block of tofu ½ a cup of nutritional yeast 1 packet of frozen spinach 2 cloves of garlic Salt and Pepper to taste Tsp of Vegeta veg stock if you have it. ½ cup of soy milk (or until it’s a ricotta texture) Handful of basil or parsley to take this to the next level. Use a food processor to make the tofu mix into a ricotta-type texture. Layer the 3 components, starting with pasta sauce. You want to have moisture around the sheets so they cook. Top with nutritional yeast, tomatoes, or vegan cheese if you’re not in a weight-loss phase. Cook at 180°C for about 10 - 20 minutes until pasta is soft. Enjoy with a big side of veg.
After just watching yet another video of one of my favorite TH-camrs decide to quit because of negative comments, I feel the need to say that you are amazing and what you have built and shared with others here on TH-cam is incredible. You have inspired me and I have made many of your recipes. Please don’t be a slave to negative people. I love you just as you are.❤
Sometimes negative comments are not meant to hurt but to be constructive criticism and to get someone thinking. I once made a comment on a fashion channel that was considered a little mean and I apologised immediately, people have different opinions and I still think that colour didn't suit the person wearing it and I was actually shocked she'd taken the comment as hurtful. I would not encourage any feedback at all on my YT channel which is private anyway but was found by trolls. You can disable comments, which I do. I would say to any TH-camr not to take anything personally and of course you don't have to invite/allow/read comments and abusers can be blocked. You also don't have to share your personal life, thoughts, family or even face - there are channels where the recipe-maker only shows their hands, never the face or any other identifying detail and their channels still have a huge number of subscribers.
@@luluandmeowA LOT of it recently is from trolls who don’t back down. Not everyone is you. Just because your negative comments are to “help” (trust me they usually never do because it comes in a sea of negative comments made to hurt) doesn’t mean a majority of negative comments are for the same.

My kids love the food and im teaching them these simple principles. I am so grateful to be on the receiving end of all the wonderful books you've read and applied the principals to this journey. I really like your philosophy/perspective on losing weight. As a much older person, I can look back over the decades and see that my weight changes were always slower than the diet culture gets us to expect and believe. Once I let go of all the expectations, rules, restrictions, and calorie counting, my weight has stabilized. I do need to shed twenty pounds to be at an optimal healthy weight, so your food and prepping ideas have been very helpful and inspirational!
I've been searching for a weight loss friendly lasagna recipe and this looks flippin' amazing! As always, I especially appreciate the weight loss tips/recommendations. The "all or nothing" approach has not worked for me, and I love how you explained how it really is all about the mindset and not about counting calories. 💕
I make a lasagna almost identical to this except I add TVP to the sauce. I also sometimes make wide zuchinni ribbons and microwave them a few minutes and squeeze out the water and layer with the noodles. It looks pretty when you slice up the servings to see the extra pop of green. Love your take on nuanced diets.

Appreciate your content- practical, simple and easy recipes for plant based food is really helpful. It also weirdly makes me feel more normal to see someone else who doesn’t often use a measuring cup and/or spoon when tweaking recipes and winging it 😊 Don’t give up, don’t focus on perfect and don’t forget to be grateful for everything you have right now!

I Love the recepy and Lasagne in general. I will have to have a big vegi add on side. Crucial as I otherwise overeat on a delicious lasagne 🫣🫠 but I love your point of a food being neither good nor bad. This looks great. I’d fill it with lots of mushrooms and peppers and such as well to really chock it full of veg. One piece with a nice side of salad and it’s perfect for a weight loss meal. At least in my view. (I wrote this before you mentioned it being full of veg and having veg on the side). 😂

I love this lasagna dish, it's a favorite. I get it, a variety of dishes are best. I make all the yummy healthy vegan recipes for my family. My problem is portion control! Waiting 20 minutes to have a second plate would probably help a lot!🥰
I just made some today. We were going to have company, but they couldn't make it at the last minute. So I have a refrigerator full of lasagna. Good thing hubby can take it to work tomorrow!
I checked out some quick lasagna sheets and there was milk in them. So be wary of those sheets. I just use regular lasagna noodles and that'll cook just as well and even thicken it up a little bit from the starch in the noodles
Most of us are not as active/tall/young as you, lovely Chelsea, so even though we've reached our desired weight, we still need to eat the same as we ate during the later weight loss stages. Our bodies still require a low cal "diet", so no "weekend binges", as you called them. I don't do cheat days and if I eat a little more at one meal, I eat less at the next or make sure I go for a walk. I am Italian and was brought up on pasta and lasagne, I love them, but I don't try to veganise them by buying vegan cheese, etc. My vegan lasagne would be made with great homemade tomato sauce (chopped tomatoes, onions, garlic and basil), sheets of lasagne and veggies (spinach, aubergines/eggplant, courgettes, broccoli, I might add mushrooms too). The processed lasagne sheets would be the treat, higher in calorie than the carbs I would normally eat, and possibly a trigger ingredient for me as I love anything pasta-like and I could easily overeat. And that's it, I would not add other higher fat ingredients like tofu, soya milk, cheese and also I don't use nutritional yeast. Another good herb to add might be dried oregano or any herb you fancy. I never cook with salt/veggie stock cube but I add them at table, in the case of lasagne I might add them to the tomato sauce at the cooking stage. I also don't like spending a lot of time creating recipes, using the food mixer, etc. I am glad you had a lovely family meal but this recipe is not for me. Tip: in the UK we can buy frozen crushed or chopped garlic, it's so much cheaper and easier than buying garlic cloves and it's been a game changer for me. Most supermarkets do it now.
I guess I just don’t understand it… Lasagna is made of pasta, meat, cheese, etc. you can’t make something out of other ingredients and call it a lasagna. If you’re against what lasagna is, don’t eat it. Create something else and give it its own name. It’s so weird to me.

It seems that veganism is very limiting… Especially where you can’t come up with your own names for food, lasagna is pasta, meat, sauce, etc., all I’m saying is just come up with a different name for vegan creations and if you actually want lasagna, eat lasagna lol !

Because I cannot eat wheat to make a lasagne I use sliced roasted eggplant or sliced zucchini. This give the layered effect just more veggies 😊

I make a similar ricotta for our lasagne.... two tweaks to add a wow factor is blitzing a bunch of basil and a squeeze of lemon into the ricotta 🎉🎉🎉
